Bailey's Flavored Cranberry & Pumpkin Seeds Cookies

" This is my entry for the Christmas Giveaway hosted by Swee San of The Sweet Spot "























This cookie has the Xmas colors...green from the pumpkin seeds and red from the dried cranberries and it is the perfect gift to make for someone special during this Xmas season.  Claire ...is the someone special that I made them for.  It is quite tedious cutting out the heart shapes for the pumpkin seeds and cranberries were quite hard to cut through. I started at 9pm last night and finished baking them at 12.30am.  I slept at 2am after the cleaning up and the photography session :p and woke up at 6am this morning.......

Therefore ,though the heart shapes were not in perfect forms but they were made out of love :ppp  and let me dedicate this post to Claire...the super super momsie who brought up her three great kids single handedly by the grace of God and she is a close friend and colleague who understands me well :)))  There is nothing I can give to her as Xmas pressie except these delectable homemade  Bailey's flavored cookies -  Claire, these are for you and your three great kiddos :)))  My Xmas pressies to you all...love, peace & joy and God's blessings all the year through :)

Soy Milk Pineapple Jelly


















I would make this soy milk jelly occasionally for the kids and Jo would love to have this ready in the fridge all the time , so that she can have them for dessert or when she craves for something sweet. Easy to make and it is such a versatile jelly . You can add in any canned fruits or fresh fruit you want,  or you can have them plain. Either way, it is one mouth-watering jelly. It  has a not too wobbly and not to hard texture but a silky smooth texture that we love :)

Christmas Fruit Cake



















I made this fruit cake using Gertrude's recipe,  Fruit Cake from her blog  - MyKitchenSnippets  and I love it and have been using this recipe whenever I needed to bake one.  And I will trying out her steamed fruit cake too. Do hop over to her blog if you want her steamed fruit cake . Easy to make and taste great expecially if you keep it for a longer period of time. Last year , I kept it for 3 months ....and the last piece always taste the best ! :p  I made a few this year and gave to friends as gifts.

Cranberry Layered Cheesecake


















I have Mary of One Perfect Bite to thank for this AWESOME  Cranberry Layered Cheesecake ! And her blog is such a blessing to me and my family.  Her blog - One Perfect Bite is truly a one perfect bite for me :p I saw this cranberry cheesecake a few days ago and I fell in love with it with just one perfect virtual bite :)) I knew I had to bake it to fulfil the craze for her cranberry layered cheesecake , so rich with a layer of fresh cranberry sauce center and top of the cake. One perfect bite of this sinfully rich cheesecake was enough to make me break the rule :p  Thank you so much , Mary for making me break my diet rule.  Perfect for this coming Christmas .  I baked this as a pre Christmas gift for Piggy Cuz who will be spending  her Christmas holiday in Australia .   Thank you Mary for this awesome recipe and Piggy Cuz for the fresh cranberries.( You just make my dream comes true )  Without this fresh cranberries , I will be just drooling virtually from the screen :)   Read on for some saliva inducing cake porn  and recipe :)

Baked French Toast With Banana And Chocolate


















I saw this breakfast treat from Angie Tee's blog - Seasalt With Food and I knew I had to try it out..being a banana and chocolate person and a person who loves french toast...thus this was served as our dessert instead of breakfast....I told the Piggy and Wild Boar... "we shall have a light dinner tonight coz I am going to make you guys something great for dessert " and I whipped this out in just half an hour. Of course , I let our stomach rest for two hour before I baked this for our dessert !

Homemade Soy Milk Custard / Tau Fu Fa



















This is homemade soy custard/tau fu fa...a wonderful dessert for the young and old. This should have been made with homemade soy milk but I was too lazy to make them so for this once, I bought the ready ones from the stall. This is also my second attempt with the first one a failure until my church friend told me to pour the soy milk in gushing motion from a height of 2 feet down into another pot of GDL mixture.....this time I did it correctly and got a nice smooth soy custard or in cantonese , we called it tau fu fa in just 30 minutes :)  It was a wonderful experience for me ...being able to make my own soy milk custard/tau fu fa from home :p

Oatmeal With Chocolate Chips And Sultanas Cookies


















I saw this delectable fibre rich cookies in Angie's blog - SeasaltWithFood and I knew I had to make them for my Piggy Joshua...he eats lots of meat so have to balance his diet with lots of fibre. Being away from home, it is hard to supervise his eating habits. So I decided to make these yummilicious cookies for him to snack on while doing his assignments.  If I were ask him to make himself a glass of oat drink everymorning before he goes for his lectures hmmmm.....I can forget I said it for he detest mushy oats.  Well , if I make them into crunchy cookies...he can finish the whole tub of oatmeal cookies then.   I make a tub full for him to take back to college :)  Smart momsie ...yeah !  It is not that difficult to make your child eat oats afterall ! :p

My Birthday Cake Unveiled - " Ferrero Rocher White & Dark Chocolate Cake"



















Today is my birthday....a day I put aside to remember the labor pain my mom went through just to deliver me into world....and the years of bringing me up to be a proper person. My mom went back to be with the Lord 4 years ago and I miss her very much. And today is a special day. Yesss...my mom brought me into this part of the world and I would like to dedicate this post to her ....mom , if you are looking down and reading this post, I want to thank you for going through all the pains for my existence today :)

Close friends asked me what cake will I making for my birthday. ( they can't wait to savor :p ) I could not answer them for I really do not know what cake to make for this special day...a cake I would like to dedicate to my Mom.....a beautiful woman, my mentor and my best friend . A wonderful mom who taught me how to cook rice and fry vegetables and taught me how to do marketing when I was 12 years old. My culinary skill taught by her came handy today and I hope my Joanna will be able to cook well like the dear Grandmama :) This special cake is " Ferrero Rocher White & Dark Chocolate Cake !

Lemon Yoghurt Cupcake With Lemon Curd Frosting


















I always look forward to Saturdays and when Friday comes I will be very happy and planning what to cook and what I want to bake....as long as I am not distracted by dramas and movies that is, then Daddy will get to savor some delectable dessert.  I woke up early and whipped up this wonderful refreshing lemon yoghurt cupcakes with lemon curd frosting....heavenly delectable and I tell you ..it was worth getting up early ! I wanted to get it ready in time for delivery to Claire and my Piggy Cousin ( Piggy Cuz ) on my way out for a good breakfast with Daddy.  I wanted to surprise them by delivery something nice at their doorsteps early morning with some nice freshly baked cuppies for their breakfast :)

Banana Chocolate Cake


Occasionally ,I will take a peek at Piggy's Cooking Journal and will virtually feast on her cakes. I saw this Banana Chocolate Cake from her cooking journal  and I told myself I must make it when I have surplus banana in the house. There is always none left for making cakes unless I hide it away from the Piggies :p  So this recipe has been in stored in  my To Do List for a few months and now finally I have the opportunity to bake it for Claire's kids.

Chicken Pie With Caramelized Onion Crust


Pies and tarts are good tea snacks and after dinner dessert .  I love making them when the kids are around. Josh was back for two weeks and this chicken pie using caramelised onion crust is something to sing about. The fragrant crust is a good complement for chicken pie. When I first saw this recipe from Marc's blog  No Recipes I knew I had fallen  in love with the crust at first sight and since then I have been making this crust for our tarts and pies...yummy !

Peach & Blueberry Cake


I know I have been drooling and drooling at Piggy's blog - Piggy Cooking Journal for the past year and have listed down a few of her bakes to try out and have added them to my to do list. And now finally, I managed to find the time to bake this one out and OMG..it was one delicious and delectable cake that I am sure you will want to try it out yourself. I picked up some USA peaches and blueberries from  Jusco  and tada... this is the outcome ! I used peaches instead of nectarine .  A wonderful and tasty peach and blueberry cake.....recipe stolen from Piggy's blog. Moist Banana, Dates & Nuts Muffins



I love muffins especially those moist and yet light ones. Having 2 boxes of dates at home ( the boss gave the staff each 2 boxes ) During the fasting month it is a blessing to give than to receive, but for me it is a blessing to receive these delectable sweet dates. I decided to use them in my muffins together with the ripe bananas at home . Added some brazilian nuts to it and the result ... moist banana, dates and nuts muffins . I love cakes with bananas and for this time I added some chopped dates and nuts to make it more delectable. For extra fragrant add in some nutmeg powder if you like :)

Heart Shaped Honey Melon Konnyaku



If this doesn't melt his heart...I really don't know what will !  I made this for Daddy....a small token for all he has done for me especially endured all those one dish meal I cooked for him  :p   I served this together with his breakfast yesterday. I meant to spring a surprise on him but it didnt work  :(  he just ate without saying anything...not romantic at all ...hmpf wait , I am going on strike soon ...hang up my apron !  :)  just kidding....he loves them.  Truly a labor of love....first have to use a cookie cutter to cut out the heart shape, place them at the bottom of the heart shaped jelly mold , then cook the konnyaku...with lots of patient.   End result - a labor of love and patience all in one heart shaped konnyaku :))

Orange Poppy Seed Cupcake With Cream Cheese Frosting



Claire asked me whether I can baked her some cupcakes for her meet up with  her Ipoh blogger friend. I told her of course no problem .....coz her blogger friend is from Ipoh , so nothing special to give except to give the friend cupcakes from Elin....lol!  Claire said  most  people get to drool but don't get to taste cakes from Elin - so she said that is the best pressies she can give to her blogger friend :) I am happy she thinks so highly of my bakes :p  So today,  I want to share with you this Orange Poppy Seed Cupcake recipe. Homemade Burger Bun



This is the first time I try my hands at making burger buns but second time using the water roux method. I will stick to this method for I find that the bun remained soft and fluffy even after a day old.  I took the recipe from Grace  of Kitchen Corner. Cookies & Cream Cheesecake



As I browsed through  Martha Stewart's Cupcake book, I saw this delectable Cookies & Cheesecake and I knew I had to bake it for Josh.  He loves anything with chocolate in it. Oreo cookies cream cheesecake in  cuppies !  Something  different from the usual cuppies that I used to bake and I can't wait to show him something new...instead of the boring cuppies that I used to make for him * wink   I knew he will love these cookies cream cheese cuppies with the crunchy chocolatey base and creamy cheesy top . This  cuppies must be chilled before serving. A delectable mouth-watering after dinner dessert.....mmm and if I am not careful I will grow sideway soon :)  Matha Stewart is a very creative woman..instead of using cookies crumbs as base, she used the whole cookie as the base...and not only it is delectable but easy to prepare too !  I love watching her show...used to stay up late just to watch her cooking show :)

Savoury Corn Kernels & Bacon Bits Muffin



If you ask me to pick one, I would prefer a savoury muffin to a sweet muffin but both types are good for afternoon tea with a cup of hot apple tea. And whenever Josh is around I have to bake some goodies for tea time coz he loves to munch on chocolate cakes, buns or muffins. I chose to bake this savoury muffins for I have the ingredients at hand for this savoury muffins.  This is a delectable muffin and you can eat as many as you want , for it can be quite addictive. The bacon bits make this muffin so aromatic and flavorful and  packed with fresh corns and red and green capsicum making this one nutritious muffins for the young and old.

Rich Baked Durian Cheesecake



There are many variations to do a baked cheesecake but I did not follow any of those tested ones. I did it my way with lots of durian pulps :p and the outcome a soft and  mind boggling durian goodness . The filling is 80 percent durian pulps and 20 percent cream cheese :)  I made this durian cheesecake just for Daddy and he said it was good.  Serve it chilled...gosh every mouthful is like tucking in durian ice cream...yummy yummy yummy to the last mouthful :p

when baking this using 80 percent durian pulps and 20 percent cream cheese
I was so afraid that it may not turned out good but thank God it was

Rich Baked Durian Cheesecake
(Printable Recipe )

Base :

175 gm digestive biscuits
75 gm melted butter

Fillings:

400 gms durian pulps – puree it ( I prefer it not too fine )

125 -150gm cream cheese
20 gm castor sugar
3 egg yolks
55gm plain yoghurt
55gm whip cream
1 tbsp corn flour
¼ tsp of salt

2.5 egg whites
25 gm castor sugar

Preparing the base :

Melt 75 gm butter . Crush the digestive biscuits into fine crumbs . Pour the melted butter over the digestive crumbs and mix well. Press into the base of a 9” springform to form the base for the durian cheese fillings . Chill in the freezer for 30 minutes.

Preparing the fillings :

Beat the cream cheese with 20 gm sugar till light and fluffy . Add in the egg yolks and whisk till well blended. Add in the yoghurt, whip cream, salt and corn flour till well mixed. Add in the durian puree and mix well.

In another mixing bowl, whisk the egg whites till it forms petals at low speed then slowly add in the 25 gm of sugar till soft peaks . Fold in the whisked whites gently into the durian cheese mixture . Pour into the chilled base and baked at 160ยบ C for 50-60 minutes or till it sets. (Place a small bowl of hot water next to the springform  pan )  Off the oven heat and let it rest in the oven for 1 hour. Take it out of the springform and chill in the fridge for a least  4 hours before serving.


* Note: Best taken the next day.  It gives a nice neat cut  with a hot knife.

Durian - King Fruit of Malaysia


This is the family all time favourite local fruit - the King fruit of Malaysia ...yessss durians. It just started two weeks ago for the State of Perak. As usual Daddy would buy from his regular man. I had a good time over eating them and whoa...fell sick shortly but now have recovered. Not to blame this fruit entirely..so happened I picked up this flu virus from someone in the office. Anyway, I am fully recovered and I blogging again right now.  Will be buying more of this fruit this weekend coz my Piggy Josh is coming back....so I will be baking something out of this fruit....be patience , I saw many bloggers have already posted up bakes with durians :) , mine will be coming soon ( actually I still haven't decided what to do with it :p )

Piggy Shaped Birthday Candles :P























The other Piggy Cuz came dropping by my place and gave me a box . I was blur...but she was so excited and asked me from  inside the car , whether I liked what I saw. I was at the gate in my pyjamas getting ready for bed and I just took it from her and said  " I like it ... so cute " ..did not really register it was 2 cute piggy shaped birthday candles....yo..that was really cute of her to buy  me  piggy shaped stuff  for the kitchen use....plates with piggy face and cutting board with piggy shapeand now birthday candles in the shape of a piggy :p

A big thanks to Piggy Cuz once again for these cuties :)

I love them to bits...but I am running out of place ...have to find a bigger pantry area for my props and stuffs. Time to do some spring cleaning too. My two fridges are full of cooking stuff and I have to check them out and have to use up those that are going to expire on me soon :p

Banana Cake


It's been a long time since I last baked a banana cake.  Claire asked me to bake one for her coz her daughter loves banana cake.  I am out of touch baking one...I am good only at baking cakes that entails lots of washing and cleaning up :p  Just kidding, my Piggies seldom request for banana cake but mostly chocolate and cakes with fruits. So I decided to try one out first before I actually bake one for her. It turned out fine except it was a wee bit too sweet. Kids are allowed to take in more sweet stuff than adults :p  so I guess it is alright for her kids....Baked this yesterday nite and thank God it turned out alright...moist and soft !

Stone Fruit Tea Cake


When I saw this beautiful cake from Gertrude's blog I knew I had to make it one day. When I was in Jusco last Monday , I saw there were lots of fresh strawberries and blueberries selling for RM9.90 per tub, I straight away bought a tub each.   Claire and her kids and my Piggy Cuz...they will be my tasters...yup they are the blessed ones * wink  ( hopefully they won't blame me for making them grow sideways )  Sure enough, the cake turned out exactly how it was described by Gertrude.  It was addictive and none had enough....it was good and I got a call from Piggy Cuz, telling me that one of her aunt tasted it and said it was good....that phone call made me happy. See, when you share something good and in return I get back some happiness money cannot buy.  It is always a joy to share what is good and I want to sincerely thank Gertrude for her generous sharing :) Love you Gert and I look forward to more sharing from you so that I can feed my Piggies with cakes that can't be bought over the counters :)))

Seashell Shaped Mango Flavored Konnyaku


Konnyaku jelly is good for health and I have been eating this very often lately  :p chewy and yet can be quite addictive if you do not when to stop and it can quite filling. I bought a packet of konnyaku jelly powder with mango flavor and has a natural mango flavor. I adore the seashell pan that Gertrude gave me and I once again make this jelly with the pan.  Whoa, they turned out like little nuggets of gold....in seashell shaped :) So beautiful that I just don't want to eat them but yet so seductive that I can't resist them :) I gave some to Claire my good friend so that she stays awake while working.....ahem...these chewy nuggets of gold  will keep her awake with their chewy texture LOL!

Carrot Cupcake


I have tried baking carrot cakes using different recipes and this is one very simple and yet delicious. The recipe uses butter and not oil. Some that I have tried are very oily but this particular one is not oily and yet moist and smell good.  As usual , I will reduce the sugar by 15 percent because I cannot stand carrot cake that is overly sweet for I know the cheese topping will be sweet too. The most important thing in a carrot cake is the frosting. It must be lemony and cheesy sweet !  Out of boredom and wanting to have some fun , I try making a few cuppies just for some cute shots for my blog. The rest I poured into a 10" square tin and baked in a preheated oven of 160 deg C for 40 minutes :)
