Cookies & Cream Cheesecake



As I browsed through  Martha Stewart's Cupcake book, I saw this delectable Cookies & Cheesecake and I knew I had to bake it for Josh.  He loves anything with chocolate in it. Oreo cookies cream cheesecake in  cuppies !  Something  different from the usual cuppies that I used to bake and I can't wait to show him something new...instead of the boring cuppies that I used to make for him * wink   I knew he will love these cookies cream cheese cuppies with the crunchy chocolatey base and creamy cheesy top . This  cuppies must be chilled before serving. A delectable mouth-watering after dinner dessert.....mmm and if I am not careful I will grow sideway soon :)  Matha Stewart is a very creative woman..instead of using cookies crumbs as base, she used the whole cookie as the base...and not only it is delectable but easy to prepare too !  I love watching her show...used to stay up late just to watch her cooking show :)


I will definitely make this again ...a keeper for sure.  It is easy to make and I know cheese and chocolate lovers will be wowed by this delish cuppies.  Martha Stewart came to Malaysia on the invitation by the Malaysian Tourism Minister two months again and she was introduced to some local cuisine.  So don't be surprised if she were to bake some local cake on her cooking show .Wish I was there when she came :))  Anyway I love her cupcake book and there are lots of nice and delicious looking cuppies in her book and I will  try baking some of the cuppies. in the near future :)

on the right  is the bottom of the cupcake with the oreo side up

meanwhile continue feasting  and finally.....

Cookies & Cream Cheesecake  ( adapted from Martha Stewart's Cupcakes )

Ingredients:

42 cream-filled chocolate sandwich cookies 
     such as Oreos, 30 left whole and
     12 coarsely chopped

2 pounds cream cheese, room temperature
1 cup sugar
1 tsp pure vanilla extract
4 large eggs, room temperature, lightly beaten
1 cup sour cream
pinch of salt

Method:

Preheat oven to 275°F . Line standard muffin tins with paper liners. Place 1 whole cookie in the bottom of each lined cup.

With an electric mixer on medium-high speed, beat cream cheese until smooth, scraping down sides of bowl as needed. Gradually add sugar, and beat until combined. Beat in vanilla.

Drizzle in eggs, a bit at a time, beating to combine and scraping down sides of bowl as needed. Beat in sour cream and salt. Stir in chopped cookies by hand.

Divide batter evenly among cookie filled cups, filling each almost to the top. Bake, rotating tins halfway through, until filling is set, about 22 minutes. Transfer tins to wire racks to cool completely. Refrigerate ( in tins) at least 4 hours ( or up to overnight) Remove from tins just before serving.

  3. gosh... this would be torturing to watch if u have not given me a few pieces to try.. now i have tried, at least it gave me some pure delight..and now i m going to my fridge to take the last piece.. hmmmmmm......thanks to u!!

  6. I've only discovered that anything "cookies and cream" is incredible and indescribebly delicious late in life. I am now making up for lost time. I have a pretty good idea how these amazing little wonders would taste. I'm making them this weekend!

    1 pound cream cheese = 16 ounces = 453.6 grams
    1 cup sugar = 220 grams
    1 cup sour cream = 245 grams
