Orange Poppy Seed Cupcake With Cream Cheese Frosting



Claire asked me whether I can baked her some cupcakes for her meet up with  her Ipoh blogger friend. I told her of course no problem .....coz her blogger friend is from Ipoh , so nothing special to give except to give the friend cupcakes from Elin....lol!  Claire said  most  people get to drool but don't get to taste cakes from Elin - so she said that is the best pressies she can give to her blogger friend :) I am happy she thinks so highly of my bakes :p  So today,  I want to share with you this Orange Poppy Seed Cupcake recipe. There is a story behind this cake and the person who shared this recipe. Read on to find out what makes me want to try out this recipe.


I got hold of this recipe through this sweet blogger called Lena of Frozen Wings and before she became a blogger herself , she used to frequent my blog as a silent reader.  I met her at one of the markets in Ipoh,  a few days before Chinese New Year , last year . She recognized me and came forward to introduce herself as one of my readers....cool and I was so surprised that people can recognise me...boy, was I not glad that I have readers from my own hometown ! That's how we met and in my recent post she left me a comment and said she is Lena the sweet girl who introduced herself at the market. I was so happy that I just have to visit her blog and what I saw on her blog was this beautiful moist orange poppy seed cake and I told myself I had to try it and so when Claire asked me to bake some cupcakes for her meet up, I knew what I am going to bake for her. Thanks Lena for sharing such a wonderful cake. I love the moist and buttery orangey flavor and the crunch from the poppy seeds and with the beautiful taste of cream cheese frosting with a tinge of lemony taste. This is what I would love for my afternoon tea...finishing with a cup of hot Turkish apple tea...wonderful!

Orange Poppy Seed Cupcake With Cream Cheese Frosting  ( adapted from Lena )
 ( recipe from Donna Hay )


Ingredients:
1/3 cup poppy seeds
3/4 cup milk
7 oz butter
1 tbsp finely grated orange rind
3/4 cup sugar
3 eggs
2 cups plain flour
1 1/2 tsp baking powder
1/2 cup freshly squeezed orange juice


Method:


1. Preheat oven to 160C. Place the poppyseeds and milk in a bowl and stir to combine. Leave aside.

2. Beat the butter, sugar and orange rind in a mixer until light and creamy. Gradually add in the eggs.

3. Sift the flour and baking powder over the btter mixture and add in the orange juice and poppy seed and

milk mixture. Stir to combine and spoon into 20cm baking tin lined with non stick baking paper.

4. Bake for 55-60 mins .


For the syrup:


1 cup sugar
1 cup freshly squeezed orange juice
1/2 cup grated orange rind


Preparation :


1. Place the sugar, orange juice and orange rind in a saucepan over low fire and stir until sugar is dissloved.

2. Increase the heat and boil 5-6 mins or until syrupy.

3.Pour half of the hot syrup over the hot cake. To serve, cut the warm or cold cake into wedges and pour

over the remaining syrup.

    Angie....this poppy seed muffins are moist and slight crunch from the seeds...it is even more delish with the cream cheese frosting :)
