I love muffins especially those moist and yet light ones. Having 2 boxes of dates at home ( the boss gave the staff each 2 boxes ) During the fasting month it is a blessing to give than to receive, but for me it is a blessing to receive these delectable sweet dates. I decided to use them in my muffins together with the ripe bananas at home . Added some brazilian nuts to it and the result ... moist banana, dates and nuts muffins . I love cakes with bananas and for this time I added some chopped dates and nuts to make it more delectable. For extra fragrant add in some nutmeg powder if you like :)
This is easy and I prefer making this to anything else for it doesn't need much washing . Well you are listening to a lazy and hard pressed for time lady....what else my drama is calling me - am watching Growing Through Life - a good rating drama - love all the casts in it..sorry I have digress a bit. Back to these mouth-watering muffins. You can whip this up in less than an hour. Baking time is about 18-20 mins. You will have the whole house smells like a bakery. Just kept a few for ourselves, the rest I gave to Claire and another colleague of mine....It is a blessing to give then to receive :) . Claire's daughter loves anything banana so I made this for her and kept a few for Daddy's dessert.

Moist Banana, Dates & Nuts Muffins

1 ½ cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 tsp nutmeg powder * optional
1/2 tsp vanilla extract
½ teaspoon salt
5 bananas (mashed)
¾ cup white sugar
1 egg (lightly beaten)
1/3 cup butter (melted)
7 dates - chopped into tiny bits
1/4 cup of chopped toasted brazilian nuts
Pre-heat the oven to 375 degrees and grease 10 muffin cups (or line with muffin papers). In a large bowl mix 1 ½ cups flour, baking powder, baking soda , nutmeg powder and salt. In a separate bowl beat together bananas, sugar, egg , vanilla extract and melted butter. Stir banana mixture , dates and nuts into the flour mixture just until moist and combined. Spoon batter into prepared muffins cups. Place into the oven and bake for 18 to 20 minutes or until a toothpick inserted comes out clean.
