
Today is my birthday....a day I put aside to remember the labor pain my mom went through just to deliver me into world....and the years of bringing me up to be a proper person. My mom went back to be with the Lord 4 years ago and I miss her very much. And today is a special day. Yesss...my mom brought me into this part of the world and I would like to dedicate this post to her ....mom , if you are looking down and reading this post, I want to thank you for going through all the pains for my existence today :)
Close friends asked me what cake will I making for my birthday. ( they can't wait to savor :p ) I could not answer them for I really do not know what cake to make for this special day...a cake I would like to dedicate to my Mom.....a beautiful woman, my mentor and my best friend . A wonderful mom who taught me how to cook rice and fry vegetables and taught me how to do marketing when I was 12 years old. My culinary skill taught by her came handy today and I hope my Joanna will be able to cook well like the dear Grandmama :) This special cake is " Ferrero Rocher White & Dark Chocolate Cake !

I remembered seeing this luscious and sinfully rich chocolatey cake from one of Ellie's post. I fell in love with it the first time I saw it in her blog. A classy cake with my favourite chocs on it....made with lots of love, passion and patience ! I managed to bake this cake and have it assembled and tops with chocolate ganache and ferrero rochers....all in 5 hours....in between waiting for the cake to cool down before I can cut and assembled them , I watched one episode of ' Ghost Writer ' LOL!
Woke up this birthday morning at 5.30 am , did some photo shots and managed to make a birthday wish before I cut the cake into 8 slices. Packed some for Claire and my other two friends and not to forget my Piggy Cousin. Kept 3 slices for Daddy and myself for our after dinner dessert :) My Piggies are not here so they missed the opportunity to savor this luscious and sinfully rich chocolatey cake :) Sorry babes...will make it up to you when your birthdays come :)
This cake is made of white and dark chocolate from bottom layer to the top and finished with Ferrero Rocher and Ferrero Rondnoir . A beautiful cake to start the day ! Thank you Ellie , for sharing this cake with me ....my birthday cake! :)

Ferrero Rocher White & Dark Chocolate Cake ( adapted from Almost Bourdain )
Ingredients:
175 g (6 oz) butter, soften, plus extra for greasing
100 g (4 oz) white chocolate
100 g (4 oz) dark chocolate
3 eggs
100 ml (3 1/2 fl oz) milk
175 g (6 oz) caster sugar
1 tsp baking powder
200 g (8 oz) self-raising flour
2 tbsp very strong coffee
1 tsp vanilla extract
For the ganache and to decorate:
285 ml double cream
200 g (8 oz) dark chocolate (70% cocoa)
50 g (2 oz) white chocolate, melted
12 x Ferrero Rochers or (I use 6 x Ferrero Rondnoirs and 6 x Ferrero Gardens)
* Ferrero Rondnoir - Crisp dark chocolate (30%) covered specialty, with a smooth filling and a dark chocolate (10.5%) centre.
* Ferrero Garden - Coconut (21%) covered wafer specialty with an almond (5%) filling.
Method:
1. Heat oven to 180C / 350F. Butter and bottom-line 2 x 20 cm cake tins.
2. For the cake, break the white and dark chocolate into two small bowls, then melt in the microwave on High for 1 minute or over a pan of simmering water.
3. Put everything else, except the coffee and vanilla, into a large bowl, then beat until creamy.
4. Divide the mixture in two, then add the coffee and melted dark chocolate to one bowl, and the vanilla and melted white chocolate to the other.
5. Stir until mixed through, then tip into the tins.
6. Bake for 20-25 minutes until rise and slightly shrunk from the sides of the tins.
7. Cool in the tins for a few minutes, then turn onto a wire rack.
8. For the ganache, heat the cream in a pan, then break the dark chocolate into a large bowl. once the cream is just boiling, pour it onto the chocolate, then leave for 5 minutes.
9. Stir until smooth, then leave until thickened and cool.
10. Split the cakes in two across the middle (a bread knife works well), layer up the pieces, alternating white and dark layers, and sandwiching, then topping them with the ganache.
11. To decorate, spoon the melted white chocolate into a piping bag with a fine nozzle (or use a sandwich bag and snip off the end instead).
12. Zig- zag the white chocolate over the cake, then finish with placing 12 Ferrero Rocher chocolates.
13. Serve on its own or for dessert with pouring cream.
Note: Best eaten on the day, but keeps in airtight container for up to 3 days.

Did not go out to celebrate or paint the town red coz my two Piggies are not around to celebrate with me so 'Daddy ' cooked dinner and cooked a special dish for me. So I took a day off from the kitchen and let him have a day cooking and washing. Birthday gal gets the day off...so now I wish everyday is my birthday.
