This cookie has the Xmas colors...green from the pumpkin seeds and red from the dried cranberries and it is the perfect gift to make for someone special during this Xmas season. Claire ...is the someone special that I made them for. It is quite tedious cutting out the heart shapes for the pumpkin seeds and cranberries were quite hard to cut through. I started at 9pm last night and finished baking them at 12.30am. I slept at 2am after the cleaning up and the photography session :p and woke up at 6am this morning.......
Therefore ,though the heart shapes were not in perfect forms but they were made out of love :ppp and let me dedicate this post to Claire...the super super momsie who brought up her three great kids single handedly by the grace of God and she is a close friend and colleague who understands me well :))) There is nothing I can give to her as Xmas pressie except these delectable homemade Bailey's flavored cookies - Claire, these are for you and your three great kiddos :))) My Xmas pressies to you all...love, peace & joy and God's blessings all the year through :)

This dough is quite soft and it is supposed to make them into a roll and chill them for 1hour before cutting them into slightly thicker than 6mm " thick slices but I am adventurous enough to roll them into 6mm thick and used a heart shaped cookie cutter instead :p because I wanted to make them special for my someone special. It is not easy to love someone outside your family but I am so happy that I can have that special bonding with Claire...she is like a sister and my mentor. I have so much to learn from her. Actually the original recipe doesn't have Bailey's in them but I added them to make it even more special for this someone special :)
My Xmas pressie from her is a bottle of Bailey's Irish Cream ( gosh this will last me another 2 years....coz I still have my half bottle of Bailey's in my fridge ) Thank you so much dear for the expensive pressie :))
Okie..enough of this sentimentality...back to the recipe. All you need is some Bailey's , cranberries, pumpkin seeds, almond nibs, butter , flour, brown sugar and a pinch of baking powder...simple ingredients plus the normal creaming method. Chill the dough in the fridge for 3/4 to 1 hour. After that, it is just cutting the heart shapes and baking them :))) mmmmmm....I stole a few pieces and ate them coz I could not resist and moreover it was passed midnight and the stomach was rumbling loud , sending a SOS for food !
wrap the dough in the cling wrap and chill
for 3/4 - 1 hour
roll them into 6mm thick and use a heart shaped cookie cutter
and start the laborious work of cutting through the cranberries
and pumpkin seeds :)

Ingredients : -Cookies dough
(A) 130 gm - butter
55 gm - brown sugar
(B) 1 - egg yolk ( Grade A )
3 tbsp - Bailey's
(C) 160 gm - Plain Flour
20 gm - milk powder
1/2 tsp - baking powder
(D) 100 gm - Pumpkin seeds + almond nibs (toasted)
100 gm - Cranberries
1. Using a cake mixer on medium speed, cream the butter and brown sugar together till light and creamy. Add in ingredients B, and slowly fold in ingredients C & D and mix into a dough.
2. Divide dough into two equal portions. Wrap in plastic and press into squares. Chilled until slightly harden ( about 3/4 - 1 hour ).
3. Remove chilled dough from fridge, gently rolled out the dough into slightly thicker than 6mm thick. Use a heart shaped cookie cutter and cut the cookies out. Arrange on a lined baking tray. Bake in a preheated oven at 160 deg C for 15-18 minutes or until light golden.
