Before I left for KL, I baked these fruit cakes for my Piggies . Fruit cake can keep for days and months , so they are great as gifts too. I baked extra for Josh to give to his girlfriend Elaine and family :) I have never tried fruit cake that uses boil and bake method , of course, this put me in motion and gosh, it was GOOD ! Love the texture and I got good feedbacks from Elaine's family and my Piggies and of course Kristy too said that the cake was good :))))))

Since the day I bought those fresh cranberries from Tesco, I have been itching to bake this cake - Cranberrry Upside Down Cake from Dorie's book " Baking: From My Home To Yours " and last Saturday I had the opportunity to bake this wonderful cake for my Piggy Cuz. This cake is rich and moist with cranberries and nuts ....a cake to die for and I told Piggy Cuz this is truly a seasonal cake and I am going to bake another one for her birthday comes January 2012 :)))) I have one more packet left of these fresh cranberries in the freezer and I think this cake deserves another round of cranberries ! The next cranberry season I will stash more of these fresh cranberries so that I can have them all year round.

I am sorry if I am going to bore you guys with fresh cranberries again LOL! I am crazy with cranberries especially those fresh ones... like beauitful edible rubies ! :) AND having 3 packets of them in the freezer !!! what do you think...of course I am using them for making Xmas cookies ! This is another mouth-watering recipe from Curtis Stone's book - 'Cooking With Curtis ' :p . This was the first recipe I bookmarked to make from his CWC ,but have kept postponing it till now. There were lots of passion fruit sold at the fruit shop and this recipe came to mind. Of course minus the raspberries for the decoration. Raspberries are expensive in this part of the world...one small punnet costs about Ringgit Malaysia 19-21 from Jusco and that is about 6-7 USD :( Raspberry goes well with the passion fruit though it is not one of the ingredients for making the creme caramel. So I left the raspberries out since I don't have any in the fridge, in this Passion Fruit And Raspberry Crème Caramel :p but just the same this Crème tasted good with the tangy passion fruit caramel....YUMMY !

When I saw this cake on Anncoo 's blog- Anncoo Journal, it was love at first sight ! I can imagine how great the taste would be when I read through her recipe. Boy, I am going to make it, I told myself and finally after almost 1.5 months I finally get to taste the real thing and gosh , it was one good butter cake to make. The fragrance of the grapefruit was so refreshing that as I was cutting it into slices, it tickles my nostril and sent my salivary glands into full action. A wonderful cake to make for the coming Christmas festive....you can't stop just at one slice...it is addictive. Took some to office for Claire and Miss K to try them out :) Even though the cake is addictive, it is better to share out the calories...this is what love is all about ... LOL!! Don't be selfish and keep all the calories to one self...share out for it is a joy to give and share during this festive season. The true meaning of Christmas !!!

The day this book " Relaxed Cooking With Curtis Stone " arrived at my doorstep , a year ago, I started to bookmark those recipes with mouth-watering pictures and this Peach And Honey Cake With Orange Syrup was one of those bookmarked :) Curtis Stone is not just a talented cook and baker, he is handsome too * wink. Okay okay, let's not talk how handsome he is, let's talk about his cake :) alright, this is a chewy cake , super moist and so delicious that once you have made it, you would want to bake it again and again. Curtis was not joking when he said that this cake will become a regular part of your repertoire once you have tasted it. That was what happened...I baked this again and again for Wild Boar...he loves it and the orange syrup was the magic sauce for this cake. Beautiful sauce for the cake. I substituted peach with plum for I can't find any at the supermarket ...only plum was available. So be it ...PLUM and it turned out SUPERB ! Don't miss this..bake it and I promise you that you will not stop baking it for your family. For me , I 'll give this a 5 stars rating...seriously ! I am glad I bought 2 of his books thus far and still looking out for his new books :) Read on for the recipe.....................................

I really enjoy flipping through all my bread books and virtually feasting on the mouth-watering photos in them :p Each baker has its own method of preparing the dough and their sharings on how to make good bread in books are really wonderful. I have two of Peter Reinhart's Artisan Bread books and I have tried out a few of his bread and I was never disappointed. I have tried his Ciabatta and a few others which turned out great and today , I want to share with you his Casatiello , ( taken from his " The Bread Baker's Apprentice " ) which is a rich, dreamy Italian elaboration of brioche , loaded with flavor bursts from cheese and bits of meat, preferably salami ( I don't have them at home and too lazy to run to the supermarket and moreover it is so expensive , so I used bacon bits instead ) This bread is traditionally baked in paper bags or panettone molds, but it can be baked in loaf pan. And you can think of it as a savory panettone , replacing the fruits and nuts with cured meat and cheese ! One word ...YUMMY!

Here comes the best Sorbet Ice Popsicle...tangy and full of mango and pineapple fragrance....awwwww this is the best thing to snack on when you had a full dinner.....put one into the mouth and slowly suck the icy cold honey sweet mango and pineapple juice ......and what more while watching your favorite movie with the put feet up....truly heaven on earth !!! I am crazy over fruity ice popsicle.....natural sweetness and healthy snacking ! Weather has been gloomy lately and towards the evening it pours like nobody business....the eastern side is flooded.....but this sorbet ice popsicle truly cheers me up. The rest of the photos are for drooling :p
Mango, Pineapple Sorbet Ice Popsicle
1 small sweet crystal pineapple -cut off skin, remove eyes and core cut into cubes
2 large ripe mango - peel skin and remove seed and cut into cubes
2 tablespoon honey
1/2 lemon juice and half lemon zest
1/2 cup cold water
Blend all in a food processor . Pour into tupper and let it semi set for 3/4 to an hour in the freezer, take out and churn again in food processor for 2-3 minutes. Then pour sorbet into popsicle tray and freeze for a day.

I find pull bread intriguing enough...I mean how people can come out with such a great idea of a pull bread. I read many recipes on pull bread and find them appealing ...very appealing :) so I decided to give it a try and in my eagerness to try something wonderful...I overlooked something important !!!!! I used the wrong flour. I was supposed to use all purpose flour but I took out the wrong flour...I used bread flour instead.....gosh...it only realised my mistake when I had difficulty stacking the layers of cinnamon and sugar dough on top of each other * rolling the eyes .... BUT thank God I managed to stack them and managed to have the pull apart effect :)

Coconut water is the clear liquid inside the young coconuts ( fruits from the coconut palm ) I love this natural fruit juice and we can get this fruit all the year round. Coconut water is a popular drink in the tropics especially in South East Asia, Pacific Islands, Caribbeans and Africa where it is available fresh, canned or bottled. On hot weather, this is the most refreshing drink ever and it is cooling for the body as the chinese believes. I normally buy from the ice stall outside my housing estate selling just coconut water. Been buying from this old uncle since my Piggies were kiddos. I heart the young coconut meat too. This is God's greatest making....and now we get to enjoy this coconut water from the young coconuts....and the matured ones...we extract coconut milk to cook rice, curries and cakes....and I have turned them into ice popsicles mmmmmm slurpsssss...

Ensaymada .....is a delicious Filipino sweet bread ! Originally from Majorca ,Spain which they called Ensaimada . You can read the history of this sweet pastry from Rina's blog :) I am glad that I have this
bad habit cravings to try out recipes that my lusty eyes ( for food porn only ) :p feasted on :p - And one of my favorite blog is Rina's - Bisous À Toi. I am very inspired by all her posts...beautiful cakes and beautiful photos and her beautiful family :) I love reading her posts and this Filipino Sweet Pastry - 'Ensaymada ' caught my attention and as usual I got to try it out to satisfy the craving . I was intrigued by her using ice water for a bread dough :) You know I always find it challenging to try out new method and I am glad I tried this out ! And even Wild Boar requested that I make this again for him. I have been following Piggy of Piggy's Cooking Journal for many years now come to think of it. I love most of the recipes she so generously shares on her beautiful blog and not to forget mentioning the beautiful photos of the bakes and dishes she prepared. Her food presentation is so alluring that I fell head over heels with this particular one that I had to make it fast and I can't wait for her to post a new one so that I would not steal her show :p Thanks Piggy ( we almost belong to the same clan ) for sharing this recipe with me. This cake is so good that Wild Boar ate more that he is supposed to eat. Love it and I shall make this again when the Piggies are back for the sem break :) The texture is so good...moist and yet light, richly flavored by the red wine sauce....mmmmmmm yummy ! One word one....SPEECHLESS !

Fresh Cranberries !!! Very rarely I see them being sold in the supermarket over here in Malaysia. And if I do see them, I know it is nearing Christmas :)))) I bought 3 packets of Ocean Spray Fresh Cranberries !!!......Ho Ho Ho jingle jingle bells ringing in my ears ! I have a long list of bakes that use fresh cranberries and today's post is just one of them :p More will be coming ! California Plums are in season too and what a great idea to put them together with the fresh cranberries in this recipe that I am going to share with you. I was flipping through Curtis Stone's book - ' Relaxed Cooking With Curtis Stone' and saw this mouth-watering dessert photo of this Plum And Cinnamon Crumble and I knew I had to made it. Too much drooling is bad for me. Nothing beats the satisfaction of having the real thing :p right ? LOL! I combined the two fruits and made Curtis Stone proud :p

It has been a long time since I last made some chicken pie for ourselves. Lots of work involved and I have been pretty busy the last few months :p and of course busy watching drama series too !!! LOL! But the craving for these delectable chicken pies was too great and I just have to make them for ourselves. One is not enough for us...it was so good that it was addictive...one, two and after the third one, we have to tell ourselves that enough is enough !!!! Have to keep some for tomorrow :p This is what happens when the craving is so great.....truly sinful indulgence.....but if you can control your cravings, then just drool all you want...virtual feasting is good and healthy too :) but if you cannot control your drooling after looking at these delectable chicken pie, then forget about calories and make them yourself :)))) It be worth all your efforts! Wild Boar requested for a banana cake and has been harping on it for the last few days and since we had a long weekend holiday. I decided to bake him one to seal his mouth. I am not keen to make normal basic banana cake....I wanted something more different ....more challenging and of course most raved about cake. I looked everywhere for a moist and yet fluffy banana cake recipe so that I will have my WB raving about it too :p Search and search and read on how each one is being made and finally I found one that I think will be great since the owner raved so much about it :p And truly, it was the most awesome banana cake I have eaten thus far ..truly ultra soft and the fragrance of the banana is so distinct that while it was baking in the oven...Wild Boar was walking in and out of the kitchen, asking when can he eat them ....haha I guess the aroma wafting out of the oven door was doing some havoc to his stomach.....:p I am raving about it the whole day to my buddy Claire . Wild Boar and I could not resist it helped ourselves to a big slice for our supper with a cup of hot chocolate.....yumyum to dreamland for us both !

Pumpkin is my favorite veg and of late ,I see so many food bloggers posting up pumpkin recipes on their blog and I too am influenced by their pumpkin cake and rolls :) I saw this mouth-watering pumpkin cinnamon rolls on Roxana's blog - A Little Bit Of Everything and I have bookmarked it for future bakes but I can't wait till then so I decided to bake them yesterday ( public holiday over here ) and seriously , no regret, it was simply marvelous...every bite was full of pumpkin goodness :) in the rolls and the filling !

Popsicle craze is still on for me...weather is scorching hot .......only ice cream and popsicle will help to quench the thirst in me . Fruity popsicle would be the best solution. I have a few dragon fruit in the fridge and decided to make dragon fruit popsicle with lemon juice and honey added to it....something fruity and tangy....slurrp slurrp....how soothing for the soul in such a hot day ! Healthy treat :) I will making more of fruity flavor popsicle from now on :)

To cut the story short, I celebrated my birthday a few days past the actual day...reason being Wild Boar was sick and the Piggies only managed to make a trip back from their hectic school life from the city. My buddy Claire celebrated my birthday a day before the actual day..LOL! She took me to St.Mikes for lunch ! Before and after the actual day...the celebration goes on.
I would like to take this opportunity to thank Piggy Cuz, Claire and dearest Wild Boar and of course my darling Piggies for the birthday gifts and to all my readers and friends who leaves birthday wishes to me on my facebook.... a big thank you for all the birthday wishes. I love them all :) I am blessed and I am forever ' 25 ' hahaha see even my birthday cake has my favorite animals singing the birthday song to me :p they are cute aren't they...a gift from Piggy Jo....she knows I love these animal picks ! Lately I have been seeing a lot of fruity popsicle posts online and I am influenced by their slurpy slurpy look and I can imagine how healthy and good they will taste. Fresh fruits of any kind would be perfect for popsicle :p Well...I thought as I grow old gracefully, I would not want popsicles anymore but that is so untrue. I crave for them everyday infact LOL! So I decided to try making my own fruit popsicles ....I have some kiwi fruits in the fridge and I took out 3 kiwis to make some kiwi yoghurt smoothie popsicles........

I made this light meal bread once and since then it became a regular munchies for us. We can munch on this the whole day through . When I first saw this recipe on Pook's blog - Dailydelicious , I knew this light meal bread would be a keeper for sure and I have been making this for the family whenever there is a long break for us so that we can munch these little bread while watching movies together. I love the soft texture of the bread and the fillings is simply wonderful. The original recipe calls for sausages but I switched it for bacon. I love the fragrant of pan fried bacon to sausages :p Who doesn't love bacon ?

The moment I saw this Pumpkin Cake on Min's blog , I knew I was struck with the cupid arrow and the ' I want and I must have ' syndrome took over... LOL! my eyes must never feast on anything nice or I won't be able to sleep until I have it baked and feasted to satisfy the sinful craving in me ! Pumpkins are a plenty in autumn and many of my foodie friends are baking cakes and muffins and pie using pumpkins. I love pumpkin and my Jo loves it too. She stir fry them with curry powder and shrimps. Simple , yet delicious !

Don't we love to have a cup of ' tong sui ' / sweet soup after dinner or have a bowl of sweet dessert of green beans , red beans or even sweet potato sweet soup ? Well, I do love to have a cup of sweet potato ' tong sui '/ sweet soup after dinner. This sweet soup is easy to prepare and it takes all in all about 40 mins to get it ready for serving. It is versatile, you can add in some sago and palm sugar to the soup but I prefer mine plain with a few red dates , ginger and screwpine leaves. Love the fragrant of the ginger , screwpine and red dates in this sweet potato soup. Something simple like this can make me happy :) alright..you are right..I love to eat and eat :p

This is my 2nd attempt at making chiffon cake and the sad thing is I am still not good at it :p Chiffon cake are nice to eat and light and easy for the stomach. I would love to make this for the sunday school kids for I know they will surely love it. Love the not oily yet light , moist and spongy texture of the cake. I wish I could bake like some of my blogger friends who can bake very beautiful chiffon cakes like a pro. Ahhhh.....I guess I need to practice more on making chiffon cake.
