Cranberry Layered Cheesecake With Biscuit Crust Base


Wild Boar loves cranberry cheesecake and begged pleaded me to bake one for him :p...so I have to oblige and make him one since he craves for it like a preggy person :p  Everyday he opens the freezer to take ice, he will see my packet of fresh cranberry , I know he will surely ask me to bake one for him and true enough he can't leave those berries alone :p  I used Mary's recipe for the layered cheese fillings but used a biscuit crust base for the cake. It turned out great like the first I baked this cranberry cheesecake using Mary's recipe. My second time making this :)  A keeper for sure.   It is great to indulge this sinfully rich  cheesecake once in a while...anyway I have to  finish off  this last packet of fresh cranberry .  It  will be quite a while before I  can bake this cake again...hopefully cranberry season come soon.  I will buy more and keep in the freezer so that I can bake this cake the whole year round :)

Now I can understand why he loves this cake so much.  It is cranberry rich for the cream cheese is filled with so much fresh cranberries :)  yummy yummy...I am craving for it again just looking at this photos :) Seriously this is nice and guess who is the lucky person...yessss my Piggy Cuz . I shared some slices with her and she said this " It is SUPERDUPER delicious !!!! "   hahaha it makes my day when people sms me to tell me they love the cake or buns that I make for them :p  Momsie's head swelled , of course  ! Don't you ? If not , then you are weird :p  so I am not weird but a normal woman who loves praises * sniggering now

Cranberry Layered Cheesecake With Biscuit Crust Base

Biscuit Crust Base

Ingredients :

170  gm digestive biscuits ( McVites) - crushed fine
70 gm butter - melted

Mix crushed biscuits with melted butter and press lightly on a 9" dia  cheesecake pan with detachable base. Freeze it for 30 minutes.

Cranberry Layer
3/4 cup sugar
2 tablespoons cornstarch
1/4 cup cranberry juice
2 cups fresh or frozen cranberries

Cream Cheese Filling

Ingredients :

Cream Cheese Layer
1 pkt 8 ounces cream cheese, softened
3/4 cup sugar
1/4 teaspoon vanilla extract
1 egg, lightly beaten

Sour Cream Topping
1/2 cup sour cream
less than 1/8 cup sugar
1/4 teaspoons vanilla extract

Whipped Cream Topping
1/4 cup heavy whipping cream
1/4 tablespoon sugar
1/16 teaspoon almond extract


Method:

1) In a small saucepan, combine 3/4 cup sugar and cornstarch; stir in cranberry juice until smooth. Add berries. Cook and stir until thickened and bubbly. Set aside.

2) In a large bowl, beat cream cheese, vanilla and sugar until smooth. Add eggs; beat just until combined. Pour half of batter into crust. Carefully spoon 3/4 cup berry mixture over batter; top with remaining batter.

3) Bake for 45 mins. Reduce heat to 250 C . Bake 25-30 mins longer or until center is almost set. Combine sour cream, sugar and vanilla; spread over top.  Bake 20-30 mins or until set.  Cool on a wire rack for 10 mins. Run a knife around edge of pan to loosen; cool 1 hour longer.  Spread remaining berry mixture over the top. Refrigerate overnight.

4) Beat cream with sugar and almond extract until stiff peaks form.  Pipe around top edge of cheesecake.

  4. I adore digestive biscuits, but never thought of them as a graham cracker alternative for a crust. Will definitely have to try it out!

  9. Beautiful cheesecake. I can see why it's been pleaded for. ;) Mmmm....cranberry season...I do believe I have some tucked away. It might be time to dig them out.
