A Very Berry Muffin

These are awsome muffins…moist and very berry indeed. I never doubt any of Chef Dennis ‘s recipes and I love every one of them. He was the featured blogger for Chobani Yogurt last week and he submitted this A Very Berry Muffin recipe and the moment I saw this on Chobani 's blog,  I was bewitched by this so yummy looking berry muffin…. I knew I had to make it for my Jo and send them to her thru her Uni friends who were down in Ipoh last Sunday.  I baked many for her to share with her friends and she told me it was AWESOME !!!  I told her I knew it would taste great.  A keeper for sure. No blueberries were available so I substituted with the fresh cranberries I have in the freezer ! One word HEAVENLY !
Now I know what to do with the cranberries I have in the freezer and the next season I am so going to stash them up :p

I used blueberries flavored yogurt and the aroma from these muffins wafting out from the oven was so good that even Wild Boar can’t wait to consume them. I gave him ONE only ! I told him the rest are for Jo and her friends….hahaha... He was oinking for more so I oinked back and told him I will bake again for him :p this is healthy muffins so I don’t mind baking these for him.  It doesn’t use butter and it is yogurt rich and all those fresh berries in them…so healthy :p   I gobbled up one myself . It was so yummy  yummy !  So berry rich and the tangy-ness from the lemon zest makes these muffins refreshing in taste.

I  cooked these fresh cranberries with sugar and lemon zest and juice
for 5 minutes to soften them

Add in the strawberries and cranberries and
gently fold into them into the batter 
so that it will be light and moist..over mixing it 
will harden the texture of the muffins

whoa...the aroma from these muffins managed to make
 the Wild Boar oinking away the whole night
to stop him oinking him I gave him ONE only !!:P

one word HEAVENLY !

Very Berry Muffins  ( taken from Chef Dennis )

1.5 C all purpose flour
0.5 C sugar
0.5 tsp salt
0.5 tsp baking powder
0.5 tsp baking soda
0.5 C Plain 2% Chobani  * I used Dutch Lady non fat yogurt - blueberries flavor
0.5 C oil * I used corn oil
2 large eggs
1 Tbsp vanilla
zest of 1 lemon (grated) & a good squeeze of juice
2 C blueberries (fresh or frozen) * I used fresh cranberry
1 C strawberries (cut into wedges)
raw sugar for sprinkling   * I omitted these
Method: -

Mix all dry ingredients in one bowl.
In another bowl, lightly beat eggs and add in Chobani, oil, vanilla, and zest and juice of lemon.  Mix until well blended.
Combine dry ingredients with wet ingredients and mix just enough to blend.
Fold blueberries and strawberries in- do not mix. Over-mixing will make muffins tough.
Sprinkle tops with sugar and bake for 25-30 minutes at 375 degrees until tops are golden brown.
