Quiche is one of the Piggies favorite and I had done a few with different ingredients for them. Quiche is so versatile and full of nourishment for growing children. Protein rich and great to serve them afternoon tea snacks or main dish for meals. Normally I would make quiche with a crust base but for this once it is a CRUSTLESS quiche....yesss you hear right...crust-less :p and it is one perfect quiche !
I got hold of this recipe from Sinner's blog - Waitakere Redneck's Kitchen . The first thing I noticed about it was the word crustless and one dish washing and then the glutton 's eyes strayed to her quiche photos and yessss.... I am going to make this crustless quiche for dinner! Salmon is always available in the freezer :p but unfortunately no ham available LOL! thus I tweaked it a bit and added in spinach instead! What a wonderful and flavorful crustless quiche. Love it and I share out this quiche with my Cousin Piggy and of course some goes to Claire. Wild Boar and myself each have 2 helpings . What a delicious meal we had...a great combination ...salmon, cheddar cheese , spinach, tomato slices ,onions and eggs with low fat milk and a teaspoonful of italian herbs . Easy to prepare without the crust actually. Just have to mix everything together and tada ...you have one aromatic and mouthwatering crustless quiche for dinner :) Now I am still thinking of it while typing this out for you and you know what ?? Claire asked me when I am going to make this again....whoa ...I told her to hang on for a while...we are supposed to reduce some calories ...aren't we ? :p The rest is for you to drool...healthier this way and more photos so that you get satiated after reading to the end of my post ! I am wicked but kind in a way * wink

Crustless Salmon & Spinach Quiche ( adapted from Sinner's Crustless Salmon & Ham Quiche )
½ cup flour
¼ tsp baking powder
4 eggs, beaten
2 cups low fat milk
75g reduced-fat spread/butter, melted
210gm can pink salmon, drained * I used fresh salmon, pan seared and flakes it
1 slice ham, chopped (optional) * I omitted this
1 onion, chopped
½ cup grated cheese
handful of chopped fresh chives (optional) * I replace with blanched spinach drain and chopped coarsely
1 tomato, cut into rings (optional)
black pepper, salt
1. Sift flour and baking powder into a bowl.
2. Stir in eggs, milk and butter. Add salmon, ham, onions, grated cheese and chives. Mix everything together until just combined.
3. Pour into a large greased baking pan. Add in the tomato rings. Season with black pepper on top.
4. Bake at 180C for about 45 minutes or until set.
5. Leave to cool a bit before slicing.
