Plum Blueberry Upside-Down Cake

After the book Bon  Appétit Desserts by Barbara Fairchild  arrived from Book Depository , I find myself  reading through the book faster than reading the chapters of my Bible  :p  I can't even finish my bible in a year, but looks like I am already half way through Bon  Appétit Desserts which has more than 500 recipes :p  Since it is berry season in the State , we have quite a good selection of berries being sold in the supermart over here and I bought some blueberries back for making this beautiful upside-down cake.  A keeper for sure and you will agree with me that this is truly a good cake to serve with ice cream after you have read through how this was made.

Banoffee Sundae

Weather is hazy, HOT and rain for the past few days and it is horrible having to face the day sweating away .  Imagine ...even after a cold shower , I came out  sweating away.  The house air con in full blast...God alones know how much the electric bill will be this month  :(  this is the time I envy those living in cold countries :p   How to make myself feel better ? Yea... Banoffee Sundae that was in this month Flavour magazine came to the rescue.  The most important ingredient here is the butterscotch that I know how to make my own homemade butterscotch sauce...there will be more sundaes with Butterscotch sauce...lovely flavor and it truly make this sundae lips smacking good :)  It will truly appease the soul and mind of someone facing the hot humid weather ! ^ *

Konnyaku Mixed Fruit Jelly

The weather is and humid and with the added haze , with certain States where the reading shows alert.  We pray for heavy rain to come and meanwhile I make a quick and no fuss konnyaku for cooling off :) Throw in a can of mixed fruits and there you are...something to chew on while battling the hot humid weather of today.  This is so easy to prepare and WB and myself can chomp down 4 or 5 pieces of hearts konnyaku filled with mixed fruits :)

Soft Cheese Bread II - Peter Reinhart

As promised, I re-make Peter Reinhart's Soft Cheese Bread using BEER instead of lukewarm water .  Yea...I am fascinated by this man and his bread making using different applications.   There is so much to learn from his book - Artisan Breads Every Day.  This time round , I used beer and what do I noticed? Any difference ?? Yes.......

Australia Sweet Potato Sweet Soup/Tong Sui

What are so special about these Australia sweet potatoes ??? Nothing so special , just that they are the australian specie :)  I thought they were, maybe different  in texture, sweeter or more fluffy than our local ones but no they tasted the same except one thing I noticed...they are more firm in texture and I like it. Local ones get soft fast and breaks up easily but this one remains firm yet soft and fluffy and the soup remains clear :)   I woke up at 6am and had a sudden craving for some sweet soup or ' tong sui ' as the chinese called it....and guess what......

' Durian Sushi '

It is durian season again !!!  how could I not savor some this less but it is a must eat item in my menu :p  Bought some back and other than eating it in its original state, I make ' durian sushi ' using glutinous rice which is my favorite , instead of the sushi rice.  It is great to eat durian with glutinous rice.  Making them into sushi roll tasted even better, with the toasted nori  wrapping... I made this for dessert and I make sure we had a light dinner :p so that we can tuck in these heavenly durian filled sushi  LOL!  yea.... we are durian lovers :)   Most Malaysians love this thorny fruit.....I do !

English Muffins - Peter Reinhart

I love muffin like the one above.  English muffins are great to savor...the texture is so different though it is called muffin, it taste like bread.  It has a spongy texture and a cross between a crumpet and a roll.  The inside is soft and custardy with lots of pockets and the outside is chewy and caramelized .  Love the nicely burnt cornmeal dusting on the outside.  The method to make this english muffin is very unique and I find it challenging once again to wake up at 5 am in the morning to make them for our breakfast.   This recipe is from the recent bread book I bought - Artisan Breads Every Day by Peter Reinhart .  Love this book so much that I carry it to the office with me everyday so that I can flip through the book during my lunch hour :)  And this is one recipe that I find interesting to try out !

Soft Cheese Bread

Yay ! another bread recipe from Peter Reinhart...Soft Cheese Bread. I so love this man and his wonderful technique in making artisan bread.  Love the soft skin and flavorful inside :)  And they are so easy to make too.  I love the cheesy and onion fragrance of this soft bread.  He uses chives and onions and cheese but since I do not have chives at home, I substituted chives with spring onions and you know what  ? spring onions and cheese actually do go well together.  Perfect match !

Toasted Almond Scones - Dorie Greenspan

These Toasted Almond Scones can be called triple almonds scones because it has three different form of almonds in it...ground almonds , finely silvered/ chopped almonds and almond extract that makes these scones so almond-ny .  This recipe is taken from Dorie's Baking From My Home To Yours . Love this book so much that it has become a ritual to flip through the pages everyday and planning what to bake from the book....lots of beautiful recipes and they are quite simple to make  too.  Saw this almond scones and I knew I had to make them for our breakfast but of course needless to say, before dawn arrived , we took some for our late nite was soft and fluffy on the inside and a light crunch on the outside and every bite is full of almond fragrance......mmmmmm
