Dutch Apple Pancake With Butterscotch Sauce

I 've got a sudden craving for apple pancake and  I thought it would be great to make some apple pancakes for our breakfast before leaving for church. I know I will have a long day service and a church luncheon thereafter , so it would be better a have something light .  Simple to make and taste good, this apple pancake is a keeper , and with the new batch of butterscotch sauce for making butterscotch bread later in the week , it was a great idea to eat this pancake with this sauce on it....yummy and guess what ?? WB and I had a wonderful and satisfying breakfast...this is a great change compared to the oats diet I normally have for breakfast !  * oink oinking away

The brown patches are the caramelized sugar was so aromatic with the cinnamon in the batter and the buttery aroma as it cooked in the pan.  It is a healthy apple pancake for WB and myself.  Love the homemade butterscotch sauce

Dutch Apple Pancakes With Butterscotch Sauce
makes 2 pancakes

1 cup (200g) flour
½ tsp baking powder
a pinch of salt
2 eggs
2 apples(Granny Smith)
lemon juice
caster sugar
cinnamon sugar
Butterscotch sauce 

Peel and core the apples and slice them thinly. Turn them in lemon juice so they retain their color.

Combine the flour with the baking powder, cinnamon powder and salt, and add enough cold water to make a thick batter. Stir in the eggs.

Heat a little butter in a non-stick pan and spoon in the batter.

Immediately arrange the apple slices like tiles on top of the pancake. Sprinkle with sugar and cook until the pancake is brown.

Using a dinner plate or pot lid, carefully turn the pancake over so that the apples cook and the sugar caramelizes.

Turn once again, and serve hot with butterscotch sauce drizzles on top.

    Ann...I am crazy with this butterscotch sauce and seems to want to have it in all my desserts :p that mad :) but truly it is a great and butterscotch...those days apple and cinnamon :))
