Red Dragon Fruit Jelly

If you frequent my humble blog, you will know that I am now helping out in the refreshment/food department for the Sunday School and Pot Bless evangelism event . I am more concern about the food list for the kids and I am not sure whether I should make konnyaku jelly for them. Seeing the way they gobble the jelly which is springy and chewy..they may get choke on them. Thus , I am looking out for some other jellies that will not get them choked . I do not want any untowards accident to happen to them for they will be under our responsiblity or rather my responsibility :p   Saw this recipe on Wendy's blog and thus trying them out and see if the kids will choke on them and it turned out perfect . Even the matured and elderly toothless adults can savor them without any of them choking on it :)

Homemade Rice Bubbles

These homemade rice bubbles were given to me by my colleague Miss K and she is good at making these addictive snacks.  I used to receive this Chinese New Year delicacy once a year but now she makes them often to give to friends and colleagues as gifts.  I was given a big tupper of these homemade rice bubbles last Friday...awwwww this is something I truly look forward to receiving :))) Wild Boar and myself will be snacking on these rice bubbles after dinner while watching movies :p ...it was well flavored with just sea salt.  Love it and WB asked me to ask Miss K for the recipe ! and I did!  I am happy to share with you this easy to make rice bubbles :)  with the curtesy of Miss K.  Thank you Miss K for sharing how to make these addictive rice bubbles ( now I don't have to wait till CNY to get to savor these )

Sweet Potato Mantou

When I saw this Sweet Potato Mantou on Wendy's blog....I knew I had to make it eventhough I have the recipe book with mantou recipe. .  I can't believe that it is so easy to make and it tasted wonderful. Soft, light and fluffy and it taste more like a steamed bread than those store bought mantou which is more compact in texture. This is a keeper and shall be making more with different flavor. Wendy has one recipe which is banana mantou and I want to try that out too.  Great for breakfast and  when one feels like snacking on something light...I would recommend this simple to make mantou. I have some sweet potatoes which I bought a week ago and they have been sitting in the fridge drawer until I remembered them and turned them into mantou :)

Hearts & Seashells Shape Mango Konnyaku Jelly

These konnyaku jellies are fun to make and I love them in different shape and sizes. They looked so cute and they come in many flavors and it would be nice to add fresh fruits to it for it will make the jellies taste better . Something to chew on besides the jellies :)    My church members love the mango flavored ones and they will request for more fresh mangoes bits in it :)  I made these for the sunday school kids and one thing I noticed, the little girls will go for the heart shape ones and the guys will go for the sea shells one...they are as cute as the jellies here :) and that makes me happy seeing their little hands grabbing the slippery jellies in their hands...gazed at the jelly for a second before they chuck it into the mouth and you can see them chewing the jellies and here I am a nervous rack...so worried that they might get choked !  I have warned them not to put the whole slippery jelly in the mouth , for they may get choke on it and die...hahaha , sometimes they act faster than me and before I can finish my sentence, plop in went the jelly !   Sunday school can be fun but at times can be frightening especially dealing with hyperactive kids.

I have been pretty busy the last few months attending and assisting the Sunday school in church. Baking cakes and making jellies for the kids is fun and I am happy to be placed in charge for the refreshment for sunday school. I love kids and they are the best ' creature around ' :p  they are so innocent and every time I attend to them , I feel so bless !  Unlike adults ( ahem...not to offend anyone ) they speak the truth and when they quote their memory verses from the Bible...gosh,  they put me to shame at times  LOL!

Happy Mid Autumn Festival

    • The Mid-Autumn Festival is held on the 15th day of the eighth month in the Chinese calendar, which is in September or early October in the Gregorian calendar. It is a date that parallels the autumnal equinox of the solar calendar, when the moon is at its fullest and roundest. The traditional food of this festival is the mooncake, of which there are many different varieties.

The Mid-Autumn Festival is one of the few most important holidays in the Chinese calendar, the others being Chinese New Year and Winter Solstice, and is a legal holiday in several countries. Farmers celebrate the end of the fall harvesting season on this date. Traditionally on this day, Chinese family members and friends will gather to admire the bright mid-autumn harvest moon, and eat moon cakes and pomelos under the moon together. Accompanying the celebration, there are additional cultural or regional customs, such as:
      • Carrying brightly lit lanterns, lighting lanterns on towers, floating sky lanterns
      • Burning incense in reverence to deities including Chang'e
      • Erect the Mid-Autumn Festival.(树中秋,竖中秋,in China,树 and 竖 are homophones)It is not about planting trees but hanging lanterns on the bamboo pole and putting them on a high point, such as roofs, trees, terraces, etc. It is a custom in Guangzhou, Hong Kong, etc.
      • Collecting dandelion leaves and distributing them evenly among family members
      • Fire Dragon Dances
      • In Taiwan, since the 1980s, barbecuing meat outdoors has become a widespread way to celebrate the Mid-Autumn Festival.

I could not resist these cute Piggy mooncakes and bought home some for the family :) The bigger one representing Wild Boar of course , and  followed by Momsie Elin , Piggy Jo and Piggy Josh  LOL!  Cute a anot ??? The filling is lotus paste and costs RM2 per piggy mooncake  :)

Multi Grains Bun

This multi grains bun is one healthy bun . I made them to go with the corn soup I made last Friday.  A lovely fresh herbs and wholemeal in them and coated with multi grains on the surface of the bun complete the fibre content in this bun :) Soft and fluffy and fibre rich sounds so good...doesn't it :)   I love making them and eating them with homecooked soups like the corn soup and mushroom soup. Mmmmmm lovely and it is indeed so healthy.  Love the multi grains on them too...taste good and I shall make more for our breakfast.

Barley With Gingko Nuts & Beancurd Skin

Weather is extremely hot lately . I decided to boil some barley with gingko nuts and beancurd skin sweet soup to cool down the body :)  WB and myself love this chinese sweet dessert . This is a very easy to prepare sweet soup and yet at times I am just too lazy to make them :p  To crack the nuts takes skill or the nuts will be mashed and to remove the brown skin from the gingko can be quite a task though and I think that is the reason why I seldom boil this sweet dessert eventhough I love it very much . 

Gingko nut is good for health ....helps to relief asthma and lungs congestion. It is mainly used as  memory and concentration enhancer. Just for this fact, I am sure I should consume more of these nuts ! :p  I prefer them still in their nuts rather than buying those canned ones.

Barley With Gingko Nuts & Beancurd Skin

Ingredients :-

1 small packet barley
2 pcs of beancurd skin - the type for making sweet soup
30 - 40 gingko nuts, removed of shell and skin
3 pandan leaves/ screwpine leaves , tie into a knot
Sugar to taste,
2 litre water


Wash the barley. Pour 2 litres of water into a big pot. Add in barley, gingko nuts and pandan leaves. Let it boil for about an hour.  Add in the beancurd skin and sugar to taste. Boil for 25 minutes till the beancurd skin is soft and broken up . Off the heat and serve either hot or cold.

Homemade Wholemeal Bread - Water Roux Method

It has been a while since the last time I made some bread.  I have try different methods and I still come back to this simple to make method and which produces best result too....as in the bread still remains soft and fluffy by the time I finished eating them ( I normally finishes a loaf the next day )  Homemade bread is the best bread to eat...no preservative and no chemical such as bread softener is used....thus making homemade bread the healthiest to consume bread ever.   You do not need a bread machine to produce such soft and fluffy bread. I use a cake mixer with the dough hook attached...and I am on the way to making the best bread ever :) seriously and not much kneading involved.   Wild Boar has now accepted my homemade bread and he loves them with marmalade and butter.  He was telling me to make my own homemade jam as well...well...lets see , if I am not hooked on dramas and movies, maybe I shall make my own jam then :p
