Chicken Pie With Delectable Pastry !

It has been a long time since I last made some chicken pie for ourselves.  Lots of work involved and I have been pretty busy the last few months :p and of course busy watching drama series too !!! LOL! But the craving for these delectable chicken pies was too great and I just have to make them for ourselves.  One is not enough for was so good that it was, two and after the third one, we have to tell ourselves that enough is enough !!!!  Have to keep some for tomorrow :p  This is what happens when the craving is so great.....truly sinful indulgence.....but if you can control your cravings, then just drool all you want...virtual feasting is good and healthy too :)  but if you cannot control your drooling after looking at these delectable chicken pie, then forget about calories and make them yourself :))))  It be worth all your efforts! Why I titled it Chicken Pie With  Delectable Pastry....well the pastry is good and a keeper for sure ! Read on to see what is so special about the pastry !

I saw this on HBB's blog - Happy Home Baking  and Poeny 's My Culinary Journal and I told myself I have to try it out and truly it was good...every bite was heavenly good !  The pastry was so good that Wild Boar said this to me  " don't you ever change the recipe for the pastry, keep it this way... "  arrgggh that was so authoratative of him !!! Raving Oinking the whole time as he ate the chicken pies :p   YESSSSS, the pastry is really good and easy to handle too.  I will be making some again this weekend :)  and I heart these pie molds...they are beautifully shaped :)  I can make 10 chicken pies from one load of the recipe given .

Chicken Pie - taken from Poeny's My Culinary Journal

150 gm butter
250 gm plain flour
1 tsp sugar
1 egg yolk
A pinch of salt
1 tsp of herbs ( mixed / rosemary)
100 gm yoghurt

Put all the ingredients, except yoghurt, in a mixing bowl. Rub butter into flour mixture until like breadcrumbs. Add in yoghurt and mix to a dough.
Dough will be very soft so need to keep it refrigerated for at least 30 mins.

Filling: ( adjust to own preference)
1 big onion diced
diced cooked potatoes
mixed vegetable  * I use carrots
Sliced button mushrooms
2 chicken breast, diced
½ cup water

Seasonings :
1 tbsp cornflour mixed with 2 tbsp water
1 tbsp sugar
1 tbsp oyster sauce
salt n pepper to taste
  • Heat abt 2 tbsp of oil and fry potatoes until golden. Set aside.
  • In a clean wok, heat 2 tbsp oil. Fry the onion until transparent. Add mixed vegetable, mushroom, chicken. Add in potatoes.
  • Add in water and cook for abt 5 mins. Add in seasonings.
  • Add in the cornstarch and stir to thicken mixture. Cool and set aside.
this dough is enough to make 6 half-cup muffin size pies.
Roll out the dough, cut the size required and place in a pie dish. Poke holes at the base using a fork. Put 2 - 3 tablespoons fillings in. Cut another piece of dough to cover the top. Poke a few more times using fork on the cover of the pie. Brush with 1 beaten egg. Baked in a preheated oven at 180°C for 25 - 30 mins.
use remnant to make decorations for pies.
