Chocolate Coffee Cupcakes With Bailey's Buttercream Frosting



These are my Piggies favorite cupcakes. Anything chocolatey would be fine with them and what more with Baileys buttercream icing !  For people who stays in hostel the past 4 years , these are heaven sent decadent cuppies.  I managed to get some cupcake/muffin silicone molds  from IKEA when I was with Piggy Joanna last week. She drove me there to do some shopping and you can guess what I bought from IKEA and Daiso LOL!  These cupcake/muffin silicone molds were the first on my purchase list :) Love them and can't wait to use them. The moment I arrived back home, I baked these Chocolate Coffee Cupcakes with Baileys Buttercream Frosting for Piggy Josh...and guess what.....it was so good that he ate 4 at one go and he loves the baileys buttercream icing especially.   I took one ... gosh it was really YUMMY!  The cake was moist and soft. The aroma of coffee and chocolate filled the house while it was baking in the oven , and while they were cooling on the rack, the fragrance of these two ingredients was enough to bring Wild Boar to the table !  :)

















These cupcake/muffin silicone molds came in a pack of 6..  2 baby blue, 2 pink and 2 chocolate brown and costs only RM19.90 . I love these cupcake/muffin silicone molds. Silicone are the best nonstick baking pans and they are easy to store. They look cute and you can serve the cake in their molds when serving guests.  I regretted buying just one pack :(  The brains just refuse to function at times :p  I wanted to get IKEA oven mittens but they were out of stock so I will be going to IKEA again on my next trip to KL. Hopefully they will have stock of the oven mittens by then :)

Chocolate Coffee Cupcakes With Bailey's Buttercream Frosting
makes 6-7 cupcakes

Ingredients :

60 gm butter
80 gm castor sugar
1 egg
90 ml milk
60 gm dark chocolate
2 teaspoon cocoa powder
2 teaspoon instant coffee granules + 30ml hot water
75 gm self raising flour
40 gm ground almonds

Method :

1. Preheat oven to 180C/Gas 4 and prepare cupcake cases on baking tray.
2. Combine instant coffee granules and hot water. Set aside.
3. Cream butter and sugar till light and fluffy. Add in egg and mix till well combined.
4. Sieve together flour, cocoa powder and add half to the butter mixture. Add in the ground almonds.
5. Melt the dark chocolate and add to the butter mixture.
6. Add in the milk and the balance of the flour mixture and mix well.
7. Divide into cupcake cases and bake in preheated oven for approximately 20-25 minutes.
8. Take out and cool them on rack .

Bailey's Buttercream Frosting

40 gm butter
80 gm icing sugar
1 tbsp shortening
3 tbsp/ 4 tbsp  Baileys Irish Cream

Method:
Beat the sugar till light and fluffy, add in the icing sugar bit by bit alternately with Baileys till you get the right consistency.  Scoop buttercream into piping bag with icing nozzle of your choice. Frost  cupcakes.

  2. Oh dear, I saw this too late. I'd just got myself 2 silicon cupcake trays costing Rm54 each! Ouch. I didn't know Ikea carries silicon molds. The last time I went I didn't see any, only the regular steel ones. Must make another visit soon! Thanks for sharing that bit of good news!
    Coffee and chocolate goes beautifully so I'm sure these taste as good as they look. And I love Baileys! Perfect!

  3. Ping...silicone molds are pricey over here. My boy is going UK this June so I shall order from siliconemoulds.com and ask him to lug back for me when he comes home :p but being a boy, not sure whether he will bring them back for me LOL!

    There were not many left on the shelves and I find IKEA a bit messy now. I regretted not taking more :p hopefully they have more designs the next time I visit IKEA :) I love silicone molds..they are easy to store them :) Hope you will try this recipe out.

  6. Jeannie....silicone molds are great bakeware :) easy to store and beside silicone can take oven heat up to 260C so for cakes and muffins and breads which requires temperature of 180-200C, it is safe to use silicone molds for cakes and muffins :)

  8. Those molds make the cutest cupcakes! I'm going to have to make a trip to IKEA! The cupcakes look and sound amazing, love the choc-coffee combo and just the thought of the bailey's buttercream is making me drool...yum!!

  11. May....you can substitue the shortening with milk...add the milk till you get the right consistency.

  12. Josh going to UK??? Tell him to look for TK Maxx - head for kitchen dept. They have various kitchen ware discount prices it can be a gamble what you may find but I got a silicon madeline mould before. Plus I have seen PIGGY-THEMED utensils!!! :p (& I thought of you! Xxx )

  13. Lynne....yea Josh will be going to UK to finish his degree in June :) yea I shall tell him to look out for it...hehehe not sure whether he knows what is what in the kitchen dept LOL! Whoa..Piggy Themed utensils!!!! gosh you have me excited now just thinking about it...can't wait for June to come then....hopefully he has the time to go shopping for me :p Yes, the silicone is cute and thanks for the idea of making jelly in them....I try that out. I saw Bailey in the wine shop, cost about RM90 per bottle (L). I was looking for a small bottle but they don't have it. Anyway, hope you're enjoying your day.
