Wow...I have never eaten such a delicious apple pie before and it is packed with fresh cranberries too! I have a few packets stashed up in the freezer and there are so many desserts I can make out of these ruby colored cranberry gems besides adding them to the apple pie. I love them so much that every season , I will buy a few packets and freeze them for use throughout the year. Like for instance in this apple pie...mmmmm slurrp...* I used granny smith apples and US Ocean Spray cranberries for the fillings and Martha Stewart's pate brisee for the crust , from her book " Pies And Tarts ". A great book to have anyway :) I love this book so much that most night I will flip through and virtually feast on her tarts and pies ! :p Fingers pointing to every beautiful pictures of her pies and tarts and finally fell asleep knowing I want to try her pate brisee for the cranberry apple pie the next day :)
It is a simple and easy to make pastry . I used the food processor for making the dough, so as not to overhandle the dough. While the pastry is chilled in the fridge for 20 minutes, I cooked the apple filling for two minutes and at the same time to make sure the cornstarch gave the apples a thick coating so that the cut apple slices sticks together. I added the cranberries last so that they won't pop open and stain the apples . I sprinkled some graham crackers ( crushed coarsely ) on the base of the pastry before adding the apples filling . Add a few dollops of butter on the top of the apple filling and closed with another pastry crust. Crimp the edges and make a few slit on the top so as to allow the steam to escape. Brush pie with egg wash and sprinkle generously with sanding sugar on surface and bake at 175C for 45- 50 minutes or until the crust is evenly browned. Transfer pie to a wire rack to cool completely. Serve with vanilla ice cream ,if desired.

from being soggy and at the same time
add crunch to the pie
a beautifully browned cranberry apple pie for dessert :)

you can serve this with ice cream if desired :)
