Hot Cross Bun - Easter Recipe

I made some Hot Cross Buns for  Good Friday . I took the recipe from Christine of Christine's Recipe and I  glazed the buns with my homemade Kumquat jam....awwwwesome.  These Hot Cross Buns reminded me of the nursery rhyme which I used to play on my recorder for my Piggies when they were 3 years old.  Jo's favourite nursery rhyme when she was 3 years old ....this nursery rhyme will lullaby her to sleep.  Her one hand will be holding the milk bottle and the other hand will be moving and following the rhythm of the song....she looked so cute then and  now she will blushing each time we talked about it .  Sweet memory.....

Hot Cross Buns are a round, rich, sweet , yeast bun traditionally served on Good Friday. Made of milk, yeast, sugar flour, spices, eggs, butter , currants, raisins and candied fruits . The buns are marked with a ' cross' from flour paste which symbolically represents the Cross of Christ and the Crucifixion. Do you know that there is a superstition that Hot Cross Buns baked on Good Friday never became moldy and that it was good luck to save one bun until the next year's buns were made.   Luckily , I read this part and I kept one until the next Good Friday comes :)))  Do you seriously believe me? Nope, of course I didn't, coz I make many buns and gave them to Claire and Kong.   " Piggy Cuz, in case you read this part, I did not send some to you coz, baked items are not good for you at the moment  . I used the electric hand mixer with the dough hook
and the dough turned out soft and smooth
save the part of kneading it........

after punching down the risen dough to original size
divide them into equal pieces...for me I weight the dough
to 50 g each, after which roll them into round ball

and leave to rise for 30 minutes....
meanwhile prepare the flour paste ,
make sure it is not too watery not too thick

after the buns has risen, pipe crosses on the buns and 
bake in oven at 190C  for 20-25 minutes until golden brown

while it is still warm, brush on sugar glaze...
for me , since I have the kumquat jam,
I brush on the jam and gosh it was good...

I make two loads and gave some to my colleague
and of course not to miss out...Claire :)

best eaten warm....if overnight just zap
it in the microwave and there you have
the buns that is soft and like freshly baked ones!

love the texture of the bun....
soft and fluffy with a light crunch crust
the mixed spice and kumquat glaze makes it
aromatic , I took two when it came out of the oven :p

Hot Cross Buns - adapted from Christine's Recipes


2 cups plain flour (or organic plain flour )
7g dried yeast
3/4 cups dried currants
2 Tbsp caster sugar
3/4 tsp mixed spice
pinch of salt
20g unsalted butter (cut into cubes)
150ml milk
1 large egg, lightly beaten

Flour paste for drawing crosses:
4 Tbsp plain flour
2 to 2 1/2 Tbsp water

Glaze for brushing buns:  * I use homemade kumquat jam for glazing the buns

2 Tbsp caster sugar

1 tbsp of water


1. In a large bowl, combine sifted flour, dried yeast, mixed spice, sugar , salt and currants.
2. Use a little saucepan, melt butter.  Add milk to cook for 1 minute until lukewarm.

3. Add warm milk mixture and egg to flour mixture.  Use the electric hand mixture with the dough 
hook and whisk the ingredients till thoroughly mixed and continue for another 5 minutes till the dough becomes a lump and leaves the side of the mixing bowl. 

4. Take out the soft dough and knead the dough for another 10 minutes on a lightly floured surface until it  is smooth. Place into a lightly oiled bowl. Cover with plastic wrap and a towel on top.  Set aside in a warm place for 1 hour until dough doubles in size.

5. Line a baking tray with non-stick baking paper. Punch dough with your fist to release some gas and let dough return to its original size.

6. Knead dough on a lightly floured surface until smooth. Divide into 12 even portions and shape each portion into a ball.  Place balls onto lined tray, around 1 cm apart.  Cover with plastic wrap. Let sit for 30 minutes until buns double in size.

7. Preheat oven to  190C (374F)

8. Mix flour with water together to make smooth flour paste. If it's too thick, add a little more water as you go. Transfer to a small snap-lock bag, snipping off a corner of the bag. Pipe flour paste over tops of buns to form crosses. 

9. Pop in the preheated oven and bake for 20-25 minutes until buns are brown and cooked through.
While baking buns, mix sugar with water in a small saucepan. Warm over low heat, until sugar dissolves. Brush warm glaze over cooked hot cross buns. Serve warm.  

* Note:  Zap overnight buns in microwave for 20 seconds and they are as good as just out of the oven.
