Orange Cream Cheese Tea Cake

Our Piggies gave us a  coffee percolator last Christmas and we feels that it is time to take it out and use it. Though I would prefer my normal cup of tea, but the aroma from the brewing coffee, I could not resist taking a cup - black.  And it will not be complete without a tea cake...right? So, I whipped up this beautiful tea cakes for our Saturday tea snack.  I was browsing through Daily Delicious and her ' Pineapple Cream Cheese Cake' caught my attention and had me drooling over it.  I went to the market on Saturday morning with the intention to get a pineapple for this cake but alas, I was distracted with the week's marketing that I totally forgot to get the pineapple until I reached home.... I substituted the pineapple with fresh orange instead and viola ! it was delicious but I bet the Pineapple would be even more delicious . I will make this again for sure but will use pineapple this time round :)  Perfect tea cake to go with the brewed coffee. Slurrp !

The cream cheese gives the cake a cheesy flavor and the orange juice and orange sac makes it really refreshing and the texture moist. The orange zest gave it a slight bitterish after taste which is a perfectly right for this cake.  Needless to say, nothing beats having a nice cupcake with a hot cup of freshly brewed coffe...this is what I like about the weekends :)  Baking and having the whole house perfumed with  orangey fragrance ......mmmmmm  I love it and it is doing wonders to my tired body :p

Orange Cream Cheese Tea Cake - adapted from DD's Pineapple Cream Cheese Cake
80g  Cake flour
tsp Baking powder
20g Almond powder
50g  Butter
80g  Cream cheese
90g  Granulated sugar * I use 80g 
1 Egg
1 Egg yolk
30g  Plain yogurt
½ tbsp Lemon juice * I substitute with orange juice
100g  Pineapple (tinned pineapple in light syrup, drained then weighted),
cut into small pieces  * I substitute with fresh orange sac and orange zest 
Preheat the oven to 160°C
Butter and flour the pans.
Sift together the flour, baking powder.
Cream the butter, cream cheese and sugar , until the mixture is smooth and light in color.
Add the almond powder and beat to combine, the follow by the egg, egg yolk, lemon juice, and yogurt, mixing until fully incorporated after each addition and scarp down the bowl as needed.  Pour the flour mixture and fold to combine.

Add the pineapple ( orange +some  orange zest )pieces and fold to combine.
Pour the batter into prepared pan. * I added orange zest for topping.
Bake for 30-35 minutes (if using the 18cm ring mold, the baking time will be 35-40 minutes) or until the cake spring back when lightly touched and a skewer inserted near the center come out clean.

Cool the cake in the pan for a few minutes, then unmold onto the racks to cool completely.

    You can omit the ground almond but the texture will be slightly different with the grd almond though. Almond has a good source of omega 3 fatty acids and it is low carbohydrate. Almond powder is also ground almond.
