Corn & Bacon Rolled Bread

This is a very yummy and flavorful rolled bun.  I was inspired by Dailydelicious 's rolled corn bread and all her other bread recipes.  I tweaked her recipe but kept to her basic dough recipe. I added bacon chips and cheese and parsley for extra oomph .  I make a load of eight pieces and gosh .... the whole house was filled with such a heavenly aroma that lasts for hours. I love baking bread and buns for this reason. My house is perfumed with the aroma of freshly baked bread each time I bake bread :)

Do drop by Dailydelicious to drool on her other mouth-watering bakes and I am sure you will fall in love with all her recipes she so generously shared on her blog. Her step by step picture tutorial has made it easy for me to follow.  This is her original recipe Sweet Corn Bread- Rolled Corn Bread . According to her,  this bread  is VERY soft and fragrant and it uses 2 egg yolks instead of one whole egg. Mmmm how is soft and fragrant.  Love it !  My bun looked darker in color for the fact that I added wholemeal flour and and wheatgerm for the basic dough.  Keeping to her measurement , of course and for the fillings I added in cheese and bacon chips and parsley. The next time I shall follow her recipe to the dot and let Wild Boar fast for the day if he doesn't want just corn :p

the dough is tacky but not sticky and easy to roll out
if it shrink back , let it rest another 10 more minutes
then it should be easy to roll out...
first layer...sprinkle grated cheese of your choice

second layer will be the sweet corn or corn kernels
and some fried bacon chips and some parsley

roll like you are making maki sushi

cut into 8 equal pieces

place into greased ramekins
and let rest for 30 mins or until it is
almost double in size

brush in egg wash and bake for 15-20 minutes in
a preheated oven @ 180C

a soft and fragrant bun to have for your breakfast or tea snack
