Tortano - Italian Bread with Ham, Cheese, And Olive Filling

I bookmarked this recipe from long ago and never had the chance to bake it till now....I think it has been more than 2 years since I bookmarked this and finally yesterday, I got the chance to make them for our breakfast.  The reason being Wild Boar brought home some Ham chips from Jusco for his breakfast.  Haha...and this scheming Momsie took some out to make this delicious and flavorful Italian  :p  I make delicious bread for him , so I think he should at least say thank you to me !  Anyway, I think he loves this flavorful Italian bread to bits !  Full of  ham chips and I tweaked it using wholemeal flour instead of durum wheat flour ( reason being it was not available in the shop ) and I added a layer of french mustard on the ham giving it extra oomph . The recipe is taken from Dailydelicious and the outcome was.... mine was a bit untidy and not as neat a roll as hers, but nonetheless it was delicious ! :)

It is quite fun making them and I find making bread and bun very therapeutic .  It helps me destress...haha I have been feeling kinda tired and maybe it is due to Josh soon be leaving for UK makes me having this stress feeling :p  Feeling stressed coz he will be leaving me soon ...awww mixed feeling...happy and sad at the same time...but when I am making this , I would forget about him for a while and in a happy world of my own.   "Last Sunday's sermon was about mothers having to relinquish their duty and learn to trust God .  Well, I guess it will take me some time to learn to totally relinquish my duty as a mother and be a baker instead  LOL! I guess I am the worrisome type of Momsie  "  Sorry I have digressed and now back to this lovely bread...I assure you  that it will be worth your time making it . It will be great to serve this for  breakfast and ideal  for picnic parties too.  

for the cheese, I used two combinations...cheddar and mozzarella 
and a layer of  french mustard to give it the extra oomph

baked at 200C for 35 minutes and gosh
it smelled so whole house
smelled like a bread house :)

my dough was a wee bit too thin I guess
that is why the ham were exposed at the sides  :p
practice makes perfect !

and not to mention the beautifully browned crust...
light crisp to the soft texture of the bread....

Tortano- Italian Bread with Ham , Cheese, And Olive Filling - adapted from dailydelicious


7 g instant yeast
300ml tepid water
2 tbsps olive oil
1 tbsp honey
1 tbsp flaked salt
150 g durum wheat flour * I substituted with wholemeal flour
270 g bread flour

200g mozzarella cheese * I use 100g cheddar and 100g mozzarella
200g ham
1 handful of pitted olives
1 bunch of fresh basil * I use french mustard 

Put the bread flour, durum flour and yeast in a bowl, whish to combine, add in salt and whisk again. Pour the liquids mixture into the bowl.  * I skip her steps of manual knead and use my electric hand mixer with the dough hook instead. Whisk it for 15 minutes until the dough becomes a smooth lump . Take out and lightly knead on the floured board for another 5 minutes. Cover the bowl with a tea towel and leave it to prove for 30 minutes.   

Press the dough into a rectangle about 1 cm  (1/2 in ) thick. don't roll it as then the air trapped in the dough will be squeezed out.  Place the mozzarella cheese and put in layers with the hams, olives and basil ( french mustard ) on top of the dough. Brush the edges with water and roll up the dough as you would a Swiss roll. Shape it into a circle. 

Preheat the oven to  250C Put the loaf onto a baking sheet lined with greaseproof paper and leave to prove under a tea towel for about 30 minutes.  Put the bread in the oven, then reduce the temperature to 200C and bake for 20-25 minutes or until golden brown. ( mine took about 35 minutes )  .
