Healthy Steamed Banana Cake

Steamed cakes are quite healthy actually....usually the oil used are either vegetable /olive oil or any flavorless . I would normally use corn oil or grapeseed oil.  They are easy to prepare and more important not washing involved :)  I love banana either eaten as it is or baked and steamed would be fine too with me.  When I read how easy this is , and having banana at home seal the deal.  I made this over the weekend and it turned out light, soft and  fluffy .  Love it and I ate four pieces at one go.  This is so healthy that I will definitely make this again for our supper. 

This recipe is taken from Miss Tam Chiak.  She has a lovely blog and has many good recipes.  I could not resist this one and I jumped queue and made this instead of some other recipes in the waiting  list :p  This is so good , really good that I walloped 4 pieces the moment it was out of the steamer, before I even took pictures of it LOL!  this hungry Sow can't wait for it to cool down before chomping them down !  Wild Boar enjoyed them too.  So now I know what I can do with the bananas that are turning black :p   Turn them into delicious steamed cake that is healthy , light , soft and fluffy...melts in the mouth if I can use this phrase :)

the batter is easy to prepare,
mashed bananas - leave it aside to turn brown - 30 minutes
before mixing into the batter
for I wanted the brown color fine shreds after steaming :)

scoop the batter into muffin molds with paper liners
and steam over high heat for 15 mins

take out and cool it before serving

Healthy Steamed Banana Cake  ( taken from Miss Tam Chiak )

Ingredients: (6 big muffins)
2 Eggs
100g sugar
2 ripe bananas, mashed (200g) 
150g Self-raising Flour
1/8 tsp Baking Soda
75g extra virgin oil (or any flavorless oil) * I use corn oil

1. Sift together self-raising flour and baking soda, set aside.
2. In a mixing bowl, whisk together Eggs and sugar till ribbon stage.
3. Mix in mashed bananas, beat till combine.
4. Gently fold in flour mixture and Oil, taking care not to deflate the eggs and sugar mixture. 
5. Pour Batter into muffin pan, lined with muffin cups. 

6. Steam over high heat for 15mins or till an inserted skewer comes out clean.

  4. Hi Anon, did you over steamed the cake? Do not overmix the batter rwhen you fold in the mashed banana. Usually over mix the batter will make the cake hard. Try again . Practice makes perfect ;) and remember the steamer must be boiling when you put in the cupcakes . Cover the cuppies with aluminum foil when u steaming the cakes so that water does not go into the cakes. Happy trying.

  6. HI Anon.....actually this is a simple to whip up cake. I really don't know why yours turned out hard. My friend Kathy of tried the recipe too and she has no problem with the steamed cake. Check it out on her blog . Here is the link

    I don't really know why yours turned out hard . YOu add the oil first then only fold in the flour with a big spatula so that it get folded in faster. Check out on You Tube on how to fold in flour into egg and sugar batter mixture. Other than that , I really dont know how to advise you coz this is the easiest to make cake.

    But dont be discourage, you know I am a failure in making chiffon and I never give up :) Have been trying hard to make a perfect chiffon yet it collapses each time I make them LOL!
