Orange Sour Cream Muffins with Zesty Orange Glaze

It has been a while since I baked anything nice for my colleagues :p  I wanted something easy and doesn't need much washing...old bones are creaking lately so have to cut off standing too long.  These muffins sounds easy and delicious.  One could never go wrong with orange juice and zest as one of the ingredients.  Found this recipe while surfing through Foodgawker...and needless to say, the picture caught my attention and after reading through the recipe, I was sold .  And since I have all the ingredients in the fridge , the deciding factor for baking this deliciousness for them.   Lucky ones aren't they!    I agrees with Damn Delicious that this is no ordinary muffins !  Believe is awesome!

The recipe is from Damn Delicious.... LOL!  even the name of the blog will make you salivate before you enter her blog :p    I did exactly as her recipe calls for except the glazing , I make an orange syrup to go with it instead of her zesty orange glaze.  These muffins are so easy to whip up and delicious that it would be great for parties . It is good even without the glazing.  The citrusy aroma and taste plus the soft, light and moist texture is enough to make it a winner ! Thumbs up for this simple and zesty muffins !  The sour cream in the batter makes it moist and texture light .   Even when you scoop up the batter, it is light too , so you will know for sure, the texture would be light and moist.  Love it and a keeper for sure!

Pour the wet ingredients into the dry ingredients
and do not overwork the batter so that
you get a light and moist texture

I love my fluted muffin molds.......

You can serve them as it is.....they taste good too

while the muffins are cooling,  I cook the the zesty orange syrup
replacing the zesty orange glaze

Pour the orange syrup on the muffins
when you are ready to serve

this is seriously no ordinary it to bits and
I will be making this again this weekend
 for other  friends

Orange Sour Cream Muffins with Zesty Orange Glaze ( adapted from Damn Delicious )
yields 11 muffins

1 3/4 cups all-purpose flour
2/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, melted
1 cup sour cream
1 egg
1/4 cup freshly squeezed orange juice
1 tablespoon orange zest

For the Zesty Orange Glaze (adapted from Annie’s Eats):

1 1/2 cups confectioners’ sugar
1/4 cup freshly squeezed orange juice
2 teaspoons orange zest

* I make my own orange syrup by boiling 3 tbsp of castor sugar with  1/4 cup orange juice and  2 tbsp of orange zest into a thick syrup

Preheat the oven to 400 degrees F. Line a 12-cup standard muffin tin with paper liners; set aside.
In a large bowl, combine the flour, sugar, baking powder and salt.

In a large glass measuring cup or another bowl, whisk together the butter, sour cream, egg, orange juice and orange zest.
Pour mixture over dry ingredients and stir using a rubber spatula just until moist.
Scoop the batter evenly into the muffin tray.
Place into oven and bake for 16-18 minutes, or until a tester inserted in the center comes out clean.
To make the glaze, combine the confectioners’ sugar, orange juice and orange zest. Whisk until smooth. If the glaze is too thin, add more confectioners’ sugar as needed.
When the muffins are done, cool for 10 minutes and dip the muffin crown into the glaze.
Allow glaze to set before serving

Enjoy !
