Blueberry Bread And Butter Pudding

I am not a fan of bread pudding until I saw the recipe from Lena's blog - Her Frozen Wings.  Those that my colleagues made for our office functions can be so rich and soft that I will not have second helpings.  But after reading through Lena's recipe, I find that I want to try making them since I have some left over slices of Ciabatta in the fridge.  I took her recipe and tweaked it by adding blueberries and rum infused raisins !  It was one of the best I have eaten and believe me it was deliriously yummy :)  Love it !

The sweetness was just perfect and with blueberries added , it gave a tangy taste to the bread pudding.  The raisins was soaked with rum giving it a very nice rum flavor.  The overall rating of this bread pudding is 9/10...yummy !  What a nice treat for Wild Boar and myself !  I know I have been having  sweet indulgences of late but * shrug the shoulder *  enjoy the fruits of my labor first then worry later :p

instead of using Marmalade as suggested in the recipe,
I used my homemade kumquat jam...yummy

makes me hungry....mmmm

Blueberry Bread And Butter Pudding - adapted from Lena -Her Frozen Wings


4 slices of challah ( spread some butter on each slice and each slice cut into 4 )
a handful of raisins * I infused them with rum for 15 mins
*   I added fresh blueberries 2 eggs
2 egg yolks
65gm sugar
300ml dairy cream
1/2 tsp vanilla extract
1/8 cup of hot orange marmalade ( for brushing ) * I used homemade kumquat jam


1. Arrange the cut sliced challah in the baking dish. Whisk eggs, yolks and sugar together. Place cream and vanilla in a saucepan and almost bring to boil. Pour cream over egg mixture and whisk to combine. Strain mixture over bread and let stand for 20 minutes. 

2. Sprinkle the raisins all over. Place baking dish in a large roasting pan and pour boiling water into pan coming halfway up the sides of the baking dish. Loosely cover with foil.

3.Bake at 180C for 15 minutes. Remove foil and bake a further 20 minutes or until golden. Meanwhile you can heat your marmalade. Brush pudding with hot jam and cook further 3 mins before serving.

  3. in fact, it look absolutely yummy, last time i did bread pudding before, but not that good, next time i must try out this recipe.
    By the way, may i know where you gotten the same claypot like me? actually my husband said this claypot should selling in Malaysia and advised me not to carry back from Japan, but i scare i can't get it from here, so try very hard also carry one back..but this claypot has very good quality.
