Homemade ice cream taste good besides one can control the sweetness...I love ice cream , the more creamier the better :p and we can have any flavor we want. I have been eyeing this rum raisin ice cream on Dailydelicious for almost a year. It has been in my to do list and now I can tick it off the list and this ice cream is a keeper no doubt! Don't worry you won't go drunk with the ' Captain Morgan ' rum. Though the recipe calls for 60 ml dark rum ( hard to get dark rum in Ipoh ) , I substituted dark rum with 100ml 'Captain Morgan ' rum - Piggy Cuz got me a 1 Litre bottle from the airport liquor shop :) So I can afford to soak the raisin with more rum LOL! The effect was fantastic. The rum soak raisins gave the ice cream a more flavorsome oomph. Who say you can't make ice cream without an ice cream maker...you can , but with a bit of work , you can get a creamy smooth ice cream too without the ice machine. This is one indulgent slurping that I pampered myself once in a while. My Piggy Jo is coming back this Friday, so I will be keeping 1/2 tub for her :) I just can't wait for her to be back !!!!! I need to fatten up this Piggy gal of mine !

I reduced the sugar (for the raisins and rum are already sweet) and increased the rum :p and it turned out just great for me and Wild Boar loves it too! Creamy texture and rich in rum flavor...who doesn't like it unless you are not a Rum fan. I can slurrp off two scoops at one go...believe me and I think after this sinful indulgence, I need to sweat it off :p I can't keep to the resolutions I made early this year ( forget about making new year resolutions I can't keep )....I am still gaining weight !!!
Rum Raisin Ice Cream - taken from Dailydelicious
160 gm granulated sugar * I reduced to 130 gm
6 egg yolks
a pinch of salt
300 gm whipping cream
240 gm milk
60ml dark rum * I used 100ml ' Captain Morgan' rum
100 gm raisins
Start by macerating the raisins and rum , overnight.
Beat the egg yolks with granulated sugar and salt until light in color.
Boil the milk and pour it slowly into the yolks mixture, whisk all the time, until combine.
Place the mixture over low heat and heat until 80°C, whisk constantly.
Cool to room temperature and refrigerate until cool.
Whip the whipping cream until soft peaks form, then fold in the custard with the rum from the macerated raisins. Churn the mixture in an ice-cream machine ( if you are using ) As it thickens, add the macerated raisins. Freeze until firm. * For those not using the machine, you let the ice cream mixture set in the fridge for 2 hours, take it out and give it another whisk . Repeat another time and let it set overnight. The ice cream is ready for serving.
