I love this after snack I made for Wild Boar....it is so simple to make and yet tasty. I have some Japanese sweet potatoes left in the fridge drawer and I know WB will be bored with just steaming them. And the fact that I had some grated coconut in the fridge- left over from making the Sarawak Tebaloi - Sago Cookies ( I will post this up soon ) Thus not wanting to waste these left overs in the fridge, I decided to make this sweet snacks :) and guess what WB loves it and more so especially when I served them with the animals picks...my favorite food picks....cute ?
This is a simple and easy to make and you can whip this up in less than half an hour. Boil the cut sweet potatoes dices with water and pandan leaves until soft and cooked through. Dish up. Prepare the caramel and when the caramel is ready, coat the cooked sweet potatoes and toss them on the grated coconut till they are fully coated with the coconut. Serve them cold or warm. Yummy afternoon snacks. I love it too ...I love simple cooking of late....I am getting lazier by the day LOL! but don't worry this snack is so delicious that you will want to make them yourselves :)
love the not so sweet caramel and yet
making one crave for more...perfect for
the sweet potatoes
the grated coconut coating gave the sweet potato texture
mmmmm...this is so good that Wild Boar
asked to make this more often :)
we both finished this in less than 30 minutes
Have a nice day !
