Cendol - The Malaysian Sweet Dessert

Nothing quenches thirst like a refreshing bowl of cendol on a hot day. The feel of ice shavings combined with creamy coconut milk and the sweetness of the palm sugar all melting into the ice slowly going down the parched throat is truly heavenly. This shavings of ice dessert is a delicious local dessert that can be found anywhere in any state in Malaysia and has captured the hearts of many Malaysians and tourists from all over the world.

A normal serving of cendol will have shavings of ice and scoops of diluted coconut milk with bits of cooked dough dyed green in colour and scoops of sweetened red beans and a generous drizzle of palm sugar syrup to give it is signature sweetness.

Vanilla & Chocolate Butter Cake

I love this light and yet moist butter cake.  It is delicious and healthy , not much butter and  only involve 1 egg and an egg yolk  to the whole recipe and  it is an easy to make cake. I to have two flavor and divided the batter into two portions, one chocolate and one vanilla. Serving this for CNY would be great. You can either servet it with chocolate frosting or have it plain.  Kids would love the rich chocolatey frosting and even adults can't resist them ...slurps slurps into the dragon year !

Cranberry Pistachio Teacakes

This teacake is full of pistachios and fresh cranberries . The pistachio nuts blends well the cranberries... texture of cake is soft and moist...with the burst cranberries giving it a wonderful flavor !  Love the taste of tart-ness and a  tinge of bitter aftertaste followed by a crunch from the pistachios...gosh.. every bite is heavenly.  I have three more packets and I can imagine what I can do with them in my bakes for the next few months :p   Take this with a cup of hot lemony tea...SLURP !

Pie Tee & 'Gong Xi Fa Cai ' To All

Awwww....I thought I will not find this little pie tees/ top hats so near to CNY. Most food stall would be closed on the eve, as many families will be having their reunion dinner at home or at restaurants.  I was so happy when I saw them being sold at food stall in a coffee shop near my place. Staying  here for 2 decades and I didn't know about this stall selling chinese pancakes and  pie tees !!!  How blur can I be ?   I bought two dozens  as our breakfast AppetiZer this morning, the eve of  CNY :)   This is a nyonya kueh and it has a hollow cup crust which is shaped like a hat  ( I think that is the reason why it being called a top hat ) and filled with turnip shreds. Garnishes with some crunchy onions and sesame seeds and eaten with some chilli sauce.  This is a nyonya speciality.  I don't know why it called Pie Tee and what it symbolizes but to me it is like my cup runneth over...Blessings full to the brim !    :p

MAY THE NEW YEAR BRINGS YOU
GOOD HEALTH, HAPPINESS AND PROSPERITY !

 'GONG XI FA CAI'

This is one of my favorite CNY treats...Woo Ha or Crispy Taro Shreds...used to order this for the past CNY but nowadays , people are not making this for sale anymore...that is in my place. There may be some still doing it , but those that I know of, are not doing it anymore :( so when bloggers started putting up the recipe on their blogs , I was very much inspired or rather I am very much lured into making some myself :p I first saw this on Lily's blog then after seeing Wendy's on her blog. I am SOLD ! I have to try it out before I leave for KL :))  Of course, I know I am not good at making all these CNY delicacies but knowing me, I just had to try it out before I call it quit :)  Read on to see how I fared with Wendy's version.....ahhhh Wendy, please don't SMACK me LOL! I did the short cut by shredding the taro with a shredder :p  and the result...good to eat but somehow I failed to make a good looking one :)))  Read on to see where I went wrong :) It was slightly oily though.

Pineapple-Brown Sugar Galette ~ Williams Sonoma

I have been wanting to make this Pineapple-Brown Sugar Galette since the day this book ~ Williams Sonoma- Pie & Tart was brought back by Wild Boar when he went to New Jersey in the year 2008.  Imagine how long I have kept this book and this is the second recipe I tried, the first recipe I tried from the book was the Banana Cream Pie and it was a lovely dessert too. A beautiful book with lots of saliva inducing pies and tarts photos in it . It would be a great idea to serve  this  pineapple galette to your family members when they come back for the  reunion dinner this coming Sunday :)

' Ong Lai ' is the Hokkien word for pineapple and it means prosperity will come . Isn't it  good to usher in the Dragon Year with this ' Prosperity will come pineapple galette ? :p  I tried it out last Saturday and I am glad I did that. It was so addictive that Wild Boar and myself could not stop eating at one... I willl make this  'ong lai' / pineapple galette for my siblings when they come to visit me on the 8th day of CNY - reason being I will be away for a week in KL this CNY :) I am sure they will welcome  some ' ong' coming their way LOL!

Green Peas Cookies

Chinese New Year is just a week away and everyone is busy preparing to usher in the Dragon Year on 23th January,2012 .  Spring cleaning , gate given a coat of new paint , replacing old furnitures with new ones and mostly families will be busying baking away...trying out new cookies recipes etc. For me, I don't really observe all this anymore.  I will spring clean the house round the year and at times not too bothered to do anything but just sit back and put up the feet  and watch the HK/Korean dramas * wink , munching away with whatever I can get hold in the house :p   When my Piggies were younger, I will make a fuss over CNY to give them the real feel of what CNY is all about, but now , they are above 21 and to them , CNY is a time to relax and sleep in and EAT !   But I will still bake a few cookies for CNY....how could I not ???  Green Peas Cookies is the first on my list  of to-do cookies....simple to make and yet deliciously melt-in-the mouth gems.  I sucks at making cookies but just the same, I will do my best to present one good one for the family :)  This year, we will be away for the CNY....yea with Jo again like the last Xmas :) so no cooking for me LOL! She has picked a Taiwanese Restaurant for our reunion dinner in KL :) This year I can really RELAX * OINK !!!

Fresh Apricot And Cranberry Upside Down Cake

Lately ,I have taken a liking to using fresh fruits in cakes...can't blame me for I have so much of fresh fruits in the fridge and they rot faster then we can consume them all.  Cousin Piggy gave me 3 packets more of OceanSpray fresh cranberries and two punnets of fresh apricots as CNY pressies....awwww so sweet of her . Thanks Cousin Piggy for these seasonal fruits !   I searched for a upside down cake recipe from the net and found one good one from David Lebovitz's site . Talking about David Lebovitz, I think I want to add his books to my collection......noted in my list of to get books :p  Shhhhh....never let the Wild Boar knows about this or my mission will not get accomplished :p  This cake is awesome. I love the tangy-ness, tart-ness and caramel sweetness of this upside down cake.  The moist texture of the cake is something that will make it addictive.  I replaced the milk with plain yoghurt and it turned out fantabulous !

Prune Cake

I baked this prune cake for my cell group potbless  last Friday, the first cell group meeting 2012 , and it was a lovely cake to bring for dessert.  The texture is moist and so enriched with mashed prunes.  A healthy cake for the young and old.  Healthy for the fact that prunes works as a laxative to assist the bowels movement and break down bulky food ....yea...a truly healthy cake for all ! :)

Bubble-Top Brioches - French Fridays With Dorie

I am always happy when it is FFWD  and this recipe is the first for 2012 .  Bubble Top Briohes ! I love bread making and this brioche is a classic.  Dorie has it shaped a little different from the traditional topknot brioches. She came up with this bubble top brioche - three little balls of this sophisticated dough, dropped into a mold or muffin tin. They are easy to do and they rise perfectly and bake into beauties.

Brioche is an egg bread, like challah, but richer. It has a slightly sweet, buttery flavor and while it is a soft bread, its crumb's has got a little stretch to it- pull a bit, and it will elongate elegantly. You can make it as individual breads or family sized loaves.  Dorie has it made into small individual brioche in muffin cups and I find it cute and elegant to serve at breakfast :)
