Cranberry Apple Pie


















Wow...I have never eaten such a delicious apple pie before and it is packed with fresh cranberries too!  I have a few packets stashed up in the freezer and there are so many desserts I can make out of these ruby colored cranberry gems besides adding them to the apple pie.  I love them so much that every season , I will buy a few packets and freeze them for use throughout the year. Like for instance in this apple pie...mmmmm slurrp...*  I used granny smith apples and  US Ocean Spray cranberries for the fillings and Martha Stewart's pate brisee for the crust , from her book " Pies And Tarts ".  A great book to have anyway :)  I love this book so much that most night I will flip through and virtually feast on her tarts and pies ! :p  Fingers pointing to every beautiful pictures of her pies and tarts and finally fell asleep knowing I want to try her pate brisee for the cranberry apple pie the next day :)

Chewy Toffee Cookies


















Toffee cookies !  Who doesn't like them ?  I DO !  :) I have KIV this recipe and it hasbeen in my to-do list for a year now and finally I managed to get bake them last week.  I tweaked it a bit , added in some chocolates besides snickers and toffee candies.  I substituted pecans with almond nibs and it turned out to be one fantastic tasting toffee cookies.  Needless to say, you can guess who enjoyed them the most...yea the Wild Boar for he loves the ingredients in these cookies.  I love them too but just have to control the sugar intake :p  The sweetness came from the Snickers and toffee candies ...and what more ,I have added some Ritter Sport chocolate in for there were a few pieces left in the fridge....so adding them into the flour mixture made them more chocolatey and gooey :p   Mouth -watering delicious !

Coconut Friands - French Fridays With Dorie


Today is FFWD and I am happy that I can make it to join the rest of my  Dorista friends in making these delectable friands.  We get to compare notes and improve oneself :)  Today's recipe for FFWD is Coconut Friands....whoa , this is lovely and delicious. The aroma that wafted out of the oven while it was baking was so coconutty good ( is there such a word in the dictionary ? nay, alright my invention then)  LOL!  ....the coconut fragrance was heavenly...even Wild Boar commented on the beautiful aroma cause it perfumed the whole house...seriously, I am not joking !   :)))

Mango Custard Tart

















Mango Custard Tarts for our weekend dessert :) and you know mango somehow reminds me of Thailand. The land of  lemon grass and mangoes , floating market and beautiful beaches . Thailand is famous for their Mango Sticky Rice  which I’ve been thinking of making  for our dessert but  because there’s just the two of us , I changed my mind and made Mango Custard Tarts instead :)  The tarts were packed with mango bits and mango slices as topping.  For the crust pastry,  I used  Martha Stewart 's Páte Brisée from her ' Pies & Tarts ' and it turned out to be the perfect crust for my Mango Custard Tarts :) Thumbs up.!

Almond Twists - Happy Sunday!


















Many people are already planning their summer holidays and there are great cheap holidays packages for booking now. One of them is the cheap holidays to Egypt. Claire , my buddy is so stressed with work lately and I think a holiday to Egypt sounds a great getaway break for her :)  I invited her over to my place last Sunday afternoon for brewed coffee and my freshly baked Almond Twists  :)   The topics we girls talked about was ' stress' and  ' getaways ' besides the oooh and aahs over my Almond Twist !

I suggested that Egypt would be great  for her. Why Egypt ? Because she has been to almost all parts of the world and since she has not been to Egypt,  this would be an ideal holiday for her. I am sure she will be captivated by the beautiful beaches and great diving and relaxation of the Sharm el Sheikh Red Sea coast and the historic Luxor, with its Valley of the Kings and a chance to see the tomb of Tutankhamun . Not to mention the renowned architectural wonders including the Pyramids, the Sphinx .  Well , I shall not bored you guys with our conversation and back to this delicious and mouth watering Almond Twist which I took the recipe from Dailydelicious.  Read on for the recipe and you can see how much fun I had baking them and to see Claire taking her first bite ....mmmm I  see a more relaxed Claire. The expression on her face was priceless...the wonderful aroma of brewed coffee and fresh oven baked Almond Twist had made her happy!

Kourabiedes - Greek Butter Cookies


















When Jo told me about her plans to go for a family holiday in Paphos  in Cyprus, I was already thinking of their traditional Christmas cookies - Kourabiedes.   I googled for kourabiedes and I knew I could not resist making them.  There are many versions , so I read them all and make my own and as close to the traditional ones :p  The melt in mouth texture and the wonderful flavor and brandy in it...whoa...really very Greek.  I have most of the ingredients at home except  ouza which is an anise aperitif.  To replace the ouza in the recipe,  I grated some anise powder onto the orange juice and the kourabiedes turned  out lovely.  I finally had my craving for this Greek cookies fully satiated. Hot Cross Bun - Easter Recipe

I made some Hot Cross Buns for  Good Friday . I took the recipe from Christine of Christine's Recipe and I  glazed the buns with my homemade Kumquat jam....awwwwesome.  These Hot Cross Buns reminded me of the nursery rhyme which I used to play on my recorder for my Piggies when they were 3 years old.  Jo's favourite nursery rhyme when she was 3 years old ....this nursery rhyme will lullaby her to sleep.  Her one hand will be holding the milk bottle and the other hand will be moving and following the rhythm of the song....she looked so cute then and  now she will blushing each time we talked about it .  Sweet memory.....

Kumquat Butter Cake


















I have two persons close to me who love the classic butter cake, one is Wild Boar and the other one is   Claire, my buddy :)  So last Sunday, I decided to bake them both the cake they love ( killing two birds with one stone as the saying goes :p - shhhhh  the two birds will kill one instead if they read this )  I used a classic butter cake recipe and added in some homemade kumquat for a kumquat butter cake...whoa, the aroma that wafted out of the oven while it was baking was filled with the scent of kumquat  :)  I have two bottles of kumquat compote that I made sometime back and now is the right occasion to use them.  I know Claire would love this kumquat flavored butter cake.  She told me once that she really loves the kumquat I made :)  I gave her all the heart shaped ones and left the loaf pan one for Wild Boar.  Ok, let me share this secret with you. Each time I bake anything, I will just take a small slice...that's it , just to make sure the cake taste good or I will not be able to describe to you here how wonderful this kumquat flavored butter cake is.  Moist and the texture is what a classic butter cake should be ! Great to serve this for your afternoon tea with a  cup of your favorite  tea :)

Orange Cream Cheese Tea Cake

Our Piggies gave us a  coffee percolator last Christmas and we feels that it is time to take it out and use it. Though I would prefer my normal cup of tea, but the aroma from the brewing coffee, I could not resist taking a cup - black.  And it will not be complete without a tea cake...right? So, I whipped up this beautiful tea cakes for our Saturday tea snack.  I was browsing through Daily Delicious and her ' Pineapple Cream Cheese Cake' caught my attention and had me drooling over it.  I went to the market on Saturday morning with the intention to get a pineapple for this cake but alas, I was distracted with the week's marketing that I totally forgot to get the pineapple until I reached home.... I substituted the pineapple with fresh orange instead and viola ! it was delicious but I bet the Pineapple would be even more delicious . I will make this again for sure but will use pineapple this time round :)  Perfect tea cake to go with the brewed coffee. Slurrp !

Bacon Bits And Cheese Rolled Bun


















I have been baking buns and bread the last few days....buns craze has hit me once again.  I remembered those days, when my Piggies comes back from college, I will be busy baking buns for them.  I got the inspiration from HHB and Daily Delicious to make homemade buns and I have learned so much from them. Now that the kids have grown into young adults, buns doesn't appeal so much to them and now the Wild Boar insisted that I bake some bacon and cheese buns for him to snack on * rolling my eyes *  Seriously , I dont mind at all coz the bread craze has hit me LOL!  At least I have the Boar to eat all my buns :p  Some rolled buns for our breakfast too ...yummy yummy yummy !  After baking they looked like roses...dont' they :p
