Homemade Baked Tortilla Chips With Guacamole Avocado Dip



This light snack food is prepared by Piggy Joanna when she came back from KL for the CNY celebration a fortnight ago.  After a satisfying reunion dinner, we adjourned to the sitting hall to have a session of some catching up. We have not seen each other for some months now and there were lots to catch up with each other.   We relaxed and with  soft music in the background we drank wine and snacked on these delicious tortilla chips with guacamole avocado dip prepared by our Joanna.  A happy bonding time together drinking and sharing what 2012 had been for us.   Thank you Piggy Jo for a wonderful snacking and bonding time together.   Read on for Joanna's Guacamole Avocado Dip recipe.......





The preparation for the chips is the same as tortilla chips in the previous post , except these chips does not the paprika and cayenne pepper on it.   The plain ones are better if eaten with guacamole dip.  And I asked Piggy Jo for the recipe and she is sharing it here.  She told me , she make guacamole avocado dip very often....as a mother I am proud of her :)   And my fruit of labor, today, I get to eat food prepared by my baby girl  hmmmm..... I am the most happiest momsie in my residence :p 





























Tortilla Chips With Guacamole Avocado Dip

1 packet of onion and chives tortilla wraps - cut into equal triangles

Preheat oven at 170C for 10 mins

Greased a baking sheet with canola oil or olive oil, lay the cut tortilla pieces on the greased pan and baked at 170C for 4 mins on each side or till it is lightly browned and crispy.  Cool on rack and store in air tight container while preparing  the guacamole avocado dip.

Guacamole Avocado Dip

2 ripen avocados- peel ,cut lengthwise and twist the avocado and remove seed/ pit  and mashed it coarsely
a few cherry tomatoes - remove seed and chopped coarsely
3 bird's eye chillies - chopped finely
a pinch of freshly ground black pepper to taste
a pinch of sea salt to taste
1 tbsp of olive oil
1 tbsp of lime juice/lemon juice - to taste

In a bowl, stir all the above ingredients together until evenly mixed.  Chill in the fridge for 20 mins. Take out when ready to serve with the tortilla chips.
