Apple And Cranberry Cookies



I am not a fan of cookies but when I saw this recipe in one of the chinese cookbook , I knew I had to try it out :)  It turned out delicious.  Was suppose to post this up a few months back :p but due to my tennis elbow, I totally forgotten about these cookies .  Good stuff are supposed to be shared and this is one good cookies that will have you wanting more :)  Great with a cup of hot coffee ...especially Ipoh White Coffee :)

Appple And Cranberry Cookies

Apple mixture (A)
2 apples - finely diced
30 gm butter
20gm sugar
1/2 tsp cinnamon
50 gm dried cranberries - diced

Combine all ingredient (A) in a saucepan and cook under low heat till the apple is soft .  Leave to cool


(B)
20 g milk powder 200 g plain flour
1/2 tsp baking powder
1/2 tsp baking soda

(C)
128 gm butter
80 gm brown sugar
1 egg

(D)
almond nibs for topping

Beat ingredient (C) till light and fluffy, add in egg and beat till it is well incorporated into the butter mixture.  Fold in ( B ) into C till well combined. Stir in the cooked apple mixture (A) into BC mixture till well combined.  

Shape the dough into small balls , roll the balls over the chopped almonds and lightly press them down ,  place them on greased baking sheet.  Repeat the process till finished.  Bake in preheated oven at 170C for 12-15 mins or till lightly browned and cooked.  Take out and cool on rack. Once the cookies has cooled down, store them in air tight containers.

  3. How glad was I when I saw you posted up this apple cookies as I was searching high and low for an apple cookies recipe after I have tasted the apple pie cookies by Merba brand, which I bought in the supermarket. Must try soon.
