When I saw this recipe on Sonia's blog - Nasilemaklover, I knew I just have to make it for our afternoon tea snack. Who doesn't love banana in our family...we Piggies love them in cakes and ice cream . I have tried steamed banana cake using the common recipe but with caramel, this is my first time, and I think that was what attracted me to try it out in the first place. I made the right choice and no regrets..this cake is what Sonia described, it is less oily and has a rich banana fragrance and not to mention, it is easy to whip up too. it is best to use bananas that are ripe and full of black speckles,
cake will have a rich banana fragrance
it is soft and spongy
I didn't mash the banana fine so we could taste the banana bits
as we bite into the cake...yummy!
Steamed Caramel Banana Cake - adapted from Sonia
90g coarse sugar
200g evaporated milk
15g butter
230g all purpose flour
200 g mashed banana
120g castor sugar
3 eggs(large), cold from fridge
1 tsp baking powder
1/4tsp salt
Method:
1.Add coarse sugar in a saucepan, heat over medium heat till it melts and turn brown.
2. Add in butter and stir till butter melted, pour in evaporated milk and mix well.
3. Remove from heat, stir till all caramel sugar dissolved. Set aside to cool.
4. Sift flour , baking powder and salt together. Set aside.
5.Beat eggs in a mixing bowl over medium speed, gradually add castor sugar, continue to beat till thick and pale.
6. Add in mashed banana, caramel liquid and flour. Use a ballon whisk to mix till no lumps . Pour batter into prepared pan lined with greaseproof paper and steam for 30 mins over medium heat.
