Bacon And Cheese Rolls

Since I could not bake for the time being...and am recuperating at home until the arm movement is fully recovered, I will cleaning up and shifting all my baking posts from Elinluv's Tidbits Corner to here :) Bacon and Cheese Rolls are my Piggies favorite rolls.  I used to bake these for them when they were in college and imagine , they practically grew up eating homemade buns. Homemade buns are indeed yummilicious and have no preservatives and most important I enjoyed making them.  Now is the time for me to reminisce all those lovely homemade buns that I baked for them when they were in college and I hope you too will have fun baking them.

Bacon And Cheese Rolls - adapted from Dailydelicious


200 gm bread flour
3 gm instant dried yeast
20 gm sugar
3 gm salt
20 gm unsalted butter (soft )
140 gm whole milk
40 gm bacon, cut into small pieces - lightly pan fried and drain on paper towel
40 gm mozzarella cheese, grated


1. Put the flour, the sugar and yeast in a bowl, whisk to combine, add salt whisk again. Pour the milk into the bowl.

2. Use a large spoon ( or pastry scraper) to mix everything together, and knead briefly to bring all the ingredients together.

3. Add the butter and knead by using the heel of your hands to compress and push the dough away from you, then fold it back over itself.  Give the dough a little turn and repeat. Put the weight of your body into the motion and get into a rhythm.  Keep folding over and compressing the dough.  Knead for 10-15 minutes or until the dough is soft, pliable, smooth and slightly shiny, almost satiny.  Or you can also try stretching part of the dough, if it can stretch into a thin sheet without breaking, you 've kneaded enough.

4.  Put the dough into a light buttered bowl.  Let the dough rise in a warm place until double in size ( can be 1 hour and a half, check often depend on the temperature ) Take the dough out of the bowl, deflate by touch it lightly.  Roll the dough into rectangular , 30X25cm.  Sprinkle the bacon and cheese all over the surface of the dough .  Roll into sushi roll and cut into equals part of 1.5 inches each. Place on a greased pan and leave it to rise for 10-15 minutes.  Bake at 180C for 25-30 minutes until golden brown.

Plans For The Summer Though It is Autumn Now

Well, when you see lots of pumpkin related dishes and cakes...you know that fall is in and it is time to indulge in delicious pumpkin stews and cakes :)  While the women are busy in the kitchen and the pantry, the men are busy tidying their storeroom.  My nephew and brother are busy installing racks for their surfboard storage .  They are both keen surfers and their take pride in their whole collection of surfboard.  Nephew is now planning a trip to Hawaii comes summer holiday and he is busy cleaning and keeping his surfboard in good conditions and the dad is thinking of joining him for the fun the coming summer.  Well, it guess it would be fun for my brother and family to spend the next summer holiday in Hawaii :)   I wish I could join them too but not for the time being.  I have to make sure my arm is back to mobilization before I think of going anywhere :)

Pumpkin And Sweet Potato Tong Sui

Love the combination of pumpkin , purple sweet potato and sago in pandan flavored syrup soup. I had this the day before I admitted myself for the operation. ( for those of you who do not know what is happening...I had an operation done last week -  'subacromial decompression with impingement ' -  now resting at home and praying for a speedy recovery )   A bowl of this sweet soup after dinner was what cheered me up knowing that I won't be able to cook anything until full recovery of the arm. Wish me speedy recovery , guys :)  I will be on MC for the next one or two months....meanwhile enjoy this post until I bounce back with good health :)  Btw typing this post with one finger....

Pumpkin And Sweet Potato Tong Sui

Ingredients :

1/2 kg Purple Sweet Potatoes - pared and cut into cubes- steamed till soft and cooked
1 segment of pumpkin - pared and cut into cubes- steamed till soft and cooked
1/4 cup sago - cook in boiling water till transparent - drain and runs over cold water

a knob of old ginger - crushed
3 blades of pandan leaves - tie into a  knot
palm sugar /castor sugar * according to your taste 

2 litres of water

Method -

When the water boils, add in the ginger, pandan leaves,  palm sugar/castor sugar...simmer till the sugar has dissolved and the pandan flavor has infused into the soup.Add in the cooked sweet potato and pumpkin and cooked sago.  Stir well and off the heat.   Serve either hot or chilled .

Recuperating At Home With Comfort :)

After discharged from the hospital, I am resting at home and feeling bored. Not being able to cook and bake is killing me :p.  Not able to move the arm is also killing me....in sling most of the time.  So, how do I spend my time at home.  Of course, sleep most of the time and thank God, I have spare foam mattresses in the guest room.  WB took one out and placed one in the tv  room so that I can lie on the mattress and watch my korean show in comfort.  It helps support my aching body and provides me with all round comfort :)

Dukong Langsat

Dukong Langsat as it is called in Malaysia , is an exotic , seasonal fruit originated from South East Asia. A cross between duku and longkong, thus given the name Dukong or sometimes refers to as dokong :) Before I had my operation done, I ate a lot of this seasonal fruit...it was durian and langsat season and WB bought a few kilos for me... LOL. It is sweet and juicy and very addictive.  I can eat a kilo at one sitting :) this is one of my favourite local fruit . Contains Vit A, B1 and B2 and has antioxidant properties.. mmm I just discover that the scientific name for this fruit is Lansium Domesticum and has an English name - Lanzones. Indonesia, Malaysia,  Philippines and Thailand are the largest producers of this fruit.

Being Able To Help A Friend Is A Blessing :)

WB's buddy Joe was looking for a 2-way biamplified, optimized Active speaker system with smooth, ultrawide dispersion and he asked WB for advise as where he can purchase online. He is looking for online sales as he has a tight budget for it. Joe is a musician and he does a lot of part time job performing at parties . WB spent the whole night searching online for him and finally found what Joe needed and for the price that is within his budget. Joe was happy that WB managed to place the order for him a great mackie srm450v2 at guitar center for a good price.  Joe read through the specifications and it was what he wanted. Not only Joe was happy but WB went to bed  happy too.

Avocado Filled With Yogurt And Topped With Cinnamon Flavored Almond Slices

Greek Yogurt goes well with anything...avocado especially..mmmm yummy !  I love avocado but again I can't take too much...the dietitian told me that I can only take half each time...hahaha but as I said I am greedy, so I had two halves all to myself and leaving one half to WB :p  it was so good that I could not resist it....gone with the wind what the dietitian's advice LOL!  I chopped half a fruit mixed with greek yogurt and filled each half avocado and topped it cinnamon flavored toasted almond slices . Chilled them in the fridge and eat them for dessert...yummy !

I will be going for my ' Subacromial Decompression ' with impingement surgery next week...

Searching & Searching & Finally Found It !

Have you ever find yourself searching and searching for days for an answer and still at dead end.  Well, I do and my WB told me he does at times. Anyway, I have been searching for an answer as to whether I should go for surgery after the end of the medication.  I have searched in the internet about the pros and cons of the surgery involved and finally I found the answer . I have to go for the surgery ! I have trying to avoid the subject...running away from reality is no solution.  I have to catch the bull by its horns as the saying goes.  WB was searching and searching for crank handles for his friend and finally he found it !  We are both silly people :p  I was searching for an answer and he is searching for his crank handles !
