Cheap Party Dresses For 2015

I know I have been posting quite a few posts on clothing . I guess it is because it is time for me to revamp and reorganize my wardrobe for the coming 2015.  There are really lots of function to attend and my tailor is no longer doing anymore tailoring thus, I have to resort to buying clothes online.  I am so thankful that Claire is such a fashionista in her own ways and she has many online boutiques at her finger tips.  She guided me to a few and I am truly grateful to her for her help in providing the links to me.  She is  my guardian angel when it comes to fashion and food.  Where to shop online and where to get good delicious food, it will just tell you without even blinking her eyes.   She is so kind as to even help me pick a few gowns which she thinks will suit me.  She showed me a few Cheap Prom Dresses UK suitable for the events that I will be attending in the coming months. Some are  held at posh hotels in  KL.  I can have Jo’s Serendipity Jewelry to go with the gowns.  And her handcrafted midnight blue earrings…gosh I think I will look gorgeous and will definitely look elegant too.

I have to ask Jo’s opinion whether she can make them in time for the dinner functions in early January 2015. I hope she will be able to make the jewelry in time as I know she has her thesis to complete by early next year.  Awww….life is hectic for Jo.  She has to tend to her business plus her thesis for her PhD.  Whereas I have to attend meetings and dateline to meet where work is concern.  I am looking forward to retiring early next year and hopefully, life will be more peaceful then :)

I find buying clothes online save time and energy. Everything is click click and no hassle of rushing from one shop to another and the headache of looking for car parks .  We can just stay at home and browse through the online stores and we can just pay online…another no hassle of going to banks and carrying cash on us.  Thanks Claire for the introduction to this online stores that has a wide range of my style of clothing !  I guess many of you too would be hunting for dresses before year end and shopping online helps a lot if you have a busy lifestyle.

Kuih Bangkit

Chinese New Year is just two months from now.  Kuih Bangkit ( Tapioca Flour Cookies) is a must have item for the Chinese New Year festive becoz WB  loves them. Especially those crispy yet melts- in- the mouth type. I would normally order them from my friend but for the coming CNY, I would try making them myself. I have checked out a few recipes and compared them and finally I settled for the one shared by No-Frills Recipe. Before I bake for the coming CNY, I would want to try this out first before making a bigger load for the coming festive.  It turned out great...really melts-in- the mouth type.   A big  ' thank you ' to Cheah of No-Frills Recipe for sharing this recipe.

fun cutting out the dough for baking

crispy and yet melts-in-mouth..yumm

I can't stop eating them ...they are addictive

Kuih Bangkit  - adapted from Nofrillrecipes

  • 450 gm tapioca flour
  • 6 pandan leaves, cut into about 3 inch lengths
  • 60 gm shortening
  • 130 gm icing sugar
  • 2 egg yolks
  • 150 - 200 ml thick coconut milk
  • A pinch of salt
Method
  1. In a wok, on low heat, fry the tapioca flour with the pandan leaves till the flour is light and the pandan leaves crispy.  Discard the leaves and sift the flour onto a pan to let cool for a few days.  The flour must be cooled thoroughly.
  2. Cream the shortening with the icing sugar and egg yolks till light and creamy and the sugar is totally dissolved.
  3. Add in about 100 ml coconut milk initially, cream thoroughly.
  4. Sift the tapioca flour onto a mixing bowl, add in a pinch of salt, then the creamed mixture and slowly knead till the dough does not stick to the hands, adding in coconut milk little by little when necessary.  Cover the dough with a damp cloth and let it rest for about 30 mins.
  5. Dust the wooden moulds with some tapioca flour, pinch off some dough and put it into the moulds, cut off any excess.  Knock out and place the cookies onto a baking sheet.  You can place them near to each other because they hardly expand.
  6. Bake in a preheated oven @ 180 deg. C for about 20 to 25 mins.
  7. Cool completely on a wire rack before storing them in a cookie jar.

Note:

1.  If the dough is too dry to handle, add in a little bit of coconut milk to make it pliable.
2.  You'll need to fry excess tapioca flour as you require some to dust the wooden moulds.
3.  If you don't have the wooden moulds, you can roll out the dough and cut with cookie cutters.

Looking For Black Prom Dresses?

I know I have to digress a bit on clothing instead of some bake stuff, but bear with me for a little while. I need to crap about it coz it is a treasure that I have found this online clothing My ex-classmate from New Zealand is helping her daughter to look for a black prom dress. Her prom event is at year end and when she saw my posts on online clothing, she quickly pmed me and asked me to send the website link to her. We being from the same era, we of course share the same interests and style …nothing surprising though…being from the same convent school. I recommended her the website so that she can check out some elegant Black Prom Dresses . I told her there are many elegant and sophisticated dresses that she can choose from too for herself. I am sure she will love this site. Seriously , if she does not pick this dress, I will definitely add this to my cart when I purchase for my girl !

This black satin is so beautiful and her daughter Grace will definitely look beautiful and will exude an air of elegance. The satiny material looks classy and the cutting is perfect for her slim figure.  The gown looks simple and she will look lovely in it.  I told her all heads will turn when she walks into the function hahaha I am sure all her girl friends will be envious of her when she dresses this for the function . All the boys from her class will be asking for a dance with her :)  I told her expect more dates for Grace after her prom night. LOL! I am serious when I spoke to her about the gown. The boys in the function will wolf whistle her for sure !

I told her shopping online will save her time and energy to go around town looking for a good piece of gown.  And when shopping online we do not need to carry cash with us as we can pay online with our credit card and not only that, we save petrol and the hassle of looking for a parking too.  We have the store serving us at our home…Isn’t this marvelous ?  It is a good idea for busy people like us. You can check it out here

Pineapple And Mango Tart

I am sure eveyone loves pie, be it savoury or sweet. The first pie that I tasted was apple pie and it was also the first pie that I baked when I first started baking. Chicken pie is also a favourite of the Piggy clan besides apple pie.

The moment I set my eyes on the photo of this Pineapple & Mango Pie , from my 500 Pies and Tarts book by Rebecca Baugniet, I knew I had to make it . I am glad I tried it out.  It is refreshing in taste and a wonderful dessert to serve your guests after dinner :) It will taste more yummy if it is chilled before serving.

Making homemade pastry can be intimidating to both the experienced and novice bakers like it was to me at first, too. Flakiness is the chief attribute of well-made pastry--and the most elusive; it's tricky to make, requires lotz of practice, precision and just the right touch.  I always tell my Jo one  important tip.  " To keep practicing till you have perfected it "

my two favorite fruits in a tart...hahaha feel blissful :)

it turned out great...crispy crust
and the combination of fruits...droolicious !

I prefer tarts to cake and I can eat the whole tart
all by myself :p

Pineapple & Mango Pie ( adapted from 500 Pies & Tarts by Rebecca Baugniet)

Basic crust

280g (10oz) plain flour
1/8 tsp salt
115g vegetable shortening
115g cold unsalted butter

(Combine together)
1 large egg -whisked
2 tsp white vinegar
2 tbsp ice-cold water

Method:

Combine the flour and salt in a large mixing bowl. Cut the cold butter and shortenings into small chunks and add to the flour mixture. Using a pastry blender or two knives in a criss-crossing motion, blend the butter and shortening into the flour mixture until it has the consistency of damp sand, with a few pea-sized pieces of butter and shortening remaining. using a fork or wire whisk, beat the egg with the vinegar and water. Slowly pour the egg mixture over the flour, stirring only until the mixture is moist. The dough should stick together and be able to hold the form of a ball.

Divide the dough into two balls and wrap each one in plastic wrap. Smooth each ball of dough with a rolling pin so it forms a flat disc that fills the corners of the plastic wrap. Chill in the refrigerator for a minimum of half an hour. ( If it has been chilled for a long time, it may need to soften slightly before use) To roll out the crust, unwrap one disc and place on a lightly floured surface. Roll the dough from the centre of the disc to the edge, until the crust is the desired thickness ( usually 3mm/1/8 in thick) and at least 2.5 cm( 1in) wider than the pie dish. If the dough is sticking to the rolling pin, try placing a sheet of plastic wrap over it and then rolling it out.

Remove the plastic wrap and transfer the crust into the pie dish by rolling it onto the rolling pin and then positioning it over the pie dish. If the crust is sticking to the rolling surface, carefuly separate it by sliding a sharp knife or metal spatula between the crust and the rolling surface. Carefully press the dough into the pie dish. If any cracks appear during the transfer, use lightly floured fingers to push the seams back together. For single crust pies, crimp the edge decoratively, using your fingers or fork tines. Dough can be stored in the refrigerator for up to 3 days.

Pineapple & Mango Pie

1 recipe basic crust
1 large fresh pineapple, cut into ½ in chunks (455g in total)
170g fresh mango, cut into ½ in chunks
140g caster sugar * I reduced to 100g40g plain flour
Pinch of salt
3 large eggs, lightly beaten
55g unsalted butter, melted and cooled
Method:

Preheat oven to 220C(425F/Gas mark 7)

Roll out half the quantity of pastry dough and line a 23 cm pie dish

Place the pineapple and mango chunks over the base of the pie crust. Combine the sugar, flour and salt in a medium bowl. Stir in the eggs and melted butter until well combined. Pour the sugar and egg mixture over the fruit

Roll out the second disc of pastry dough. Put the top crust on the pie, crimp the edges, and make 4 to 6 slits in the crust. Bake for 10 minutes

Lower the temperature to 160C and continue baking for 1 hour, until the crust is golden brown.
General Hints for Pastry-making

1. For best results, keep everything cold. Use cold hands, a cold marble top, pastry board or worktop and water. (To keep my hands cold, I fill a resealable plastic bag with ice and then hold it in my palms for a few seconds, when I need to or run them under cold water and then dry.) Handle the pastry as little as possible and always use the finger-tips, the coolest part of the hands. The dough is placed in a refrigerator between rollings so that the pastry remains firm.

2. Always sift the flour and salt, after measuring, together into the mixing bowl; this helps to lighten the mixture.

3. Chill the liquid in the refrigerator before use. The liquid parts (water, eggs, etc.) of the recipe should be very cold. Be careful not to overdo it - an excess of liquid causes a sticky, unmanageable dough and any extra flour then added will make it tough.

4. Rolling out must be done using firm, light strikes, rolling in one direction only and rotating the dough between "rolls". Avoid stretching the pastry as this causes shrinkage in baking.

5. Pastry requires a hot, well-preheated oven. Too low an oven temperature causes pale, hard and flat pastry.

Enjoy !

A Whole Month Of Events To Attend :)

This is my random post on clothings…I have a few important function to attend come December.  Christmas party cannot be avoided and wedding dinners at hotel.  Many of my classmates children are getting married and you can guess as much that wedding invitations are coming in and I can’t be wearing the same gown to attend the dinners …right?  I need to purchase at least 6 dresses from the online clothing boutique for these functions.  I have eyed as few beautiful dresses from Prom Dresses UK 2015  and am in love with most of the elegant dresses from this website. I print screened the one that I would love to purchase and sent to my girl and asked for her opinions.  She gave the thumbs up sign…hehehe we both truly are like twins and we both have the same taste and style when it comes to dresses and we don’t differ much with food too.   We both love the same type of bakes and our favourite being cheesecake ... LOL!

Seriously, this gown is so elegant but do you think it is too sexy for me ? * wink …Should I purchase it for my Christmas dinner with my cell group members ?  They are having our Christmas dinner at the local hotel , thus dress code has to be formal.  We have other cell groups combine together for this event. And we have to bring a guest/guests to the function.   This Christmas dinner is actually a sort of harvest event.  I am looking forward to inviting a few of my neighbor friends for this function.  It will be great to have fellowship with them and gifts are being prepared for the guests.  And after which we are to  invite them to our cell meeting.  This is a once a year event whereby we have to bring new friends to the dinner.   WB is also looking forward to inviting a few of his man friends to the event and hopefully we are all successful in bringing new friends for the cell group.  It will means a lot of us to have new friends coming to our cell group meeting.  I have to start sending out invitations to our guests to that they can prepare for the dinner and also to make the date available for them to attend our harvest event.  I am sure they took are looking forward to the event as they will have good food and gifts for that night. We have also invited gospel singers for the night event. Mmmm I want to dress my best and this elegant gown will be suitable for the dinner event ! Check it out here.

Homemade Caramelized Mango Ice Cream

I love homemade ice cream.  Especially made from fruits.  I have bookmarked Caramelized Mango Ice Cream for some time now and finally get to make it. It was really good. As long as the mangoes are ripe, the fragrant of the mango will be enough to make you yearn for more.  Mango is in season and it is best to take advantage and make some mango ice cream for the family. Weather is hot these days and this is the best time to treat the family to a good tasty homemade ice cream.

getting the caramel ready

Caramelized Mango Ice Cream
Hope this will tempt you to make some too

Caramelized Mango Ice Cream ( adapted from Food and Paper who adapted it from Roy Finamore’s Tasty: Get Great Food on the Table Every Day)

For the caramelized mango:½ cup sugar
2 mangoes, peeled, pitted and cut into large dice

For the mango ice cream:3 ripe mangoes, peeled, pitted and coarsely chopped
1/3 cup sugar
1 tablespoon molasses
pinch of coarse salt
1 cup heavy cream
1 cup milk
splash of dark rum

For the caramelized mango: Pour the sugar into a heavy medium skillet. Cook over medium heat, swirling the sugar around in the pan often, until it is dark amber. Add the diced mango. The caramel will sputter and seize up. Cook, stirring, just until the caramel dissolves. Scrape the caramelized mango into a bowl, cover, and chill thoroughly.

For the mango ice cream: Process the mangoes in a food processor until you’ve made a smooth puree. Add the lime juice, sugar , molasses, and salt. Process for a minute or so to dissolve the sugar. Scrape the puree out on a bowl, whisk in the cream and milk, cover, and refrigerate for a lest 4 hours.

Freeze the ice cream base according to the instructions for your ice cream maker. When it’s about frozen, add the caramelized mango and rum. Continue to freeze until ice cream is firm. Transfer to a container with a lid, and let the ice cream come together in the freezer for at least 2 hours before serving.

Note: If not using an ice maker, take out and whisk it every 3 hours for a least a few times for better result. The final whisk , add in the caramelized mango and rum

Online Shopping For Cheap Prom Dresses :)

Cheap prom dresses from online shopping websites.  This sounds really good. With so many events to attend , I needed to get a few dresses and it will be quite a burden for me to purchase from clothing boutiques in town. For the prices will be pricey from a boutique. What more the hassle of finding a parking space and carrying cash with me. Crime rate is so great that it is safer for me to buy clothings from website. Delivered straight to our home and stress free too and at the same time can shop in peace and in comfort.

We can take our own sweet time to look for elegant yet cheap prom dresses from the online store.  My daughter loves to shop for online clothings.  She always encourages me to buy online rather then to go to the boutique in town. We can shop till we drop by just clicking away and there are great sales from the online store at this moment.  She is getting one dress for her prom night for she is graduating in Feb 2015 . She wants to take advantage of the sale thus buying her dress earlier from the website. The range of Cheap Prom Dresses from the website is so lovely that she does not know which one to choose :) Knowing her, she will send me the designs and ask me to help her decide which one to buy :p She is so happy that I choose this one for her.  She too loves the baby blue…so cool and chic. Now she is already designing a bracelet  to match this dress …LOL! Girls are girls…beauty is number one thing in their life :p  Just kidding ! I am proud that she is graduating soon and I will be attending her convo with one of the dresses I bought from the online store.

I helped her decide and this is the one I chose for her.  What do you think ? Simple and elegant for her age and I love the color of this beautiful dress.  I am sure she will look great.  I chose a few for myself too.  It was a great bargain and I got a few dresses for my own events and I got it so much cheaper than purchasing from boutique in town.  I would recommend to my friends to get from here , so that they too can get cheaper dresses by buying online :)  Good news are to be shared and not keeping to myself.

Mushroom And Bacon Quiche

When my son, Josh , told me that he is getting married next year, I feel elated and tears of happiness brimmed my eyes.  Isn't that what every mom would love to hear from their children ?  And last Saturday, the fiancee's family phoned to say they are dropping by for the weekend to discuss about the wedding. WB and I gave our house a quick spring clean :)  Normally , I would wait till a week before Christmas before I do a thorough spring cleaning.

Since it was their first visit, I wanted to make sure that they enjoyed their stay with us.  I planned the meal well making sure I cooked their favorite dishes ( this I confirmed with my son's fiancee :p )  and the parents love quiches.  Thus I baked my popular mushroom quiche for the afternoon tea snack.  We normally have our afternoon tea at our garden table facing our tiny garden where my Zinnias are blooming.  There might be a lot of insects , moths, mosquitos at this time of the year but nothing that the mosquito repellant cannot do :)  And since the Zinnas are in full blooms, a beautiful sight to behold.   A serene place to have good conversations and discussion on Josh's wedding. Lots to plan and decisions to make early booking of wedding venue etc.

Sorry, I have digress again...I can't control my happiness with just the word wedding * wink ,,,okay now back to my mushroom quiche.  I used fresh button mushrooms and lots of cheddar cheese. and the beautiful part of the quiche is the pastry crust. I added cheddar cheese to the pastry making.  It has to be a special one to impress the future in-laws * wink wink   Guess what?  the quiche became the main topic instead of the wedding plans hahaha.....I hope you too will be impressed with the crust recipe  !
