My first post for 2017, I know I have been in a procrastinating mood the last 12 months :p but I hope this year will not be a slow moving one for me . Okay, I feel like kneading and since I have lots of homegrown spring onions in the fridge, I decided to make this Flaky Spring Onions Pancakes for our breakfast. I am glad that I tried it and gosh it was like the roti prata except this is oriental roti prata :) Easy to make and really taste good. I really don't understand people who say this "why bother to cook when it is just for the two persons" ....oh well, they dont know why they miss out LOL! Okay , maybe I am weird or the odd one out.
Anyway, back to this flaky pancake, one just need flour, water , spring onion and oil and you can make the most delicious flaky pancake. I watch this recipe on youtube and I knew I had to try it out to believe that it is flaky. Thank you May Lynn for sharing this wonderful recipe here
the ingredients for making this delicious flaky pancake
flour, hot water, room temp water, salt, spring onions and vegetable oil
knead dough till smooth and soft, divide dough into 4 equal portions
and let it rest for 20 mins
roll into a round flat disc, brush oil mixture (3 tbsp flour, 1/2 tsp and 2 tbsp cooking oil )
then sprinkle chopped spring onions on surface
then roll like swiss roll,
after rolling inot a swiss roll, flatten it a bit, brush oil mixture on surface
then roll it up again from left to right
tuck the end under the roll and flatten and roll into a flat disc
roll into a flat round disc
and it is ready for frying
heat up a frying pan with a tsp of cooking oil, once the pan is hot
fry the pancake under medium heat ,
3 mins on each side until lightly brown and crisp and cooked thru
crunch it before serving
it is flaky and delicious, you can dip it with chilli sauce or
black vinegar with chopped chilli and chopped spring onions
I called this chinese roti prata :)

Flaky Spring Onions Pancake - adapted from May Lynn YouTube
ingredients:
3 cups flour
1/2 tsp salt
1/2 cup boiling water
1 cup room temperature water
2 stalks spring onions - chopped
some cooking oil for frying the pancake
oil mixture
3 tbsp flour
1/2 tsp salt
2 tbsp cooking oil * I use rice bran oil
black vinegar sauce dip -
mix the ingredient together to make dip sauce
1 tsp of black vinegar
1/2 tsp soy sauce
chopped chilli
chopped spring onion
Method:
Mix 3 cups of flour and 1/2 tsp of salt in a mixing bowl. Pour in 1/2 cup boiling water and using a spatula, mix into a dough, add in 1 cup room temperature water and continue to knead until a smooth dough is formed. Cover and let the dough rest for 20 mins.
Chopped the spring onions and leave aside.
Prepare the oil mixture by mixing 3 tbsp of flour, 1/2 tsp salt and 2 tbsp of cooking oil in a bowl till well mixed.
After dough has rested for 20 mins,cut dough into 4 pieces. Gently knead each piece then gently roll each piece into a thin pancake, brush the oil mixture on surface and sprinkle the chopped spring onions on the surface.
Roll it up , lightly flatten it . Brush oil mixture again on top and roll up again. Tuck the end part under and roll again into a flat pancake.
Fry the pancake on medium heat. Keep on turning the pancake until it is fully cooked.
Serve with chilli sauce or black vinegar sauce.
