Dried Longans Fresh Wai San Aerial Tubers And Red Dates Sweet Soup


This is a must have sweet soup for our family on the morning of the 1st day of CNY.  It is a sweet soup with dried longans, red dates and instead of adding 'pak hup' I replaced it with fresh Wai San aerial tubers. I harvested some of these aerial tubers from the Wai San plant from my lil space for this sweet soup.

I don't know about other families but for mine, it is a must have on the 1st day of CNY as it symbolizes sweetness for the whole year through :) a tradition my mom passed on to me and I just keep it going in the family.  I love this simple to prepare sweet soup of longan and red dates. Add screwpine leaves for a nice fragrant . The fresh Wai San aerial tubers gave it a nutty flavor.

Dried Longans , Fresh Wai San Aerial Tubers And Red Dates Sweet Soup 

ingredients:

200  gm dried longans - wash and soak for 5 mins
10 pieces of dates - remove seeds
10 pieces of Wai San aerial tubers - peeled
10  hard boiled quail eggs - remove shell * optional
2 screwpine leaves
rock sugar to taste
1500 litres water

Method:
Put 1.5 litres water to boil, when water boils, add in the dried longans, red dates, rock sugar and screwpine leaves and continues to boil till fragrant and the water has turned brownish . Add in peeled fresh aerial tubers and hard boiled eggs and continue boil for another 8 mins. Off heat and serve hot or cold.

Seaweed Flakes Cookies























What a relief ! I am back to some baking after the kitchen was out of bounds to me for a week because of some repair works in the kitchen.  I have been wanting to bake these cute healthy cookies for our coffee time but didn't have time to do it. This recipe was shared by Grace Choo on her blog and I knew I had to make it.  I am a copy cat of most of her recipes and you can say that I am a big fan of hers . I can understand Grace making these doggy shaped cookies for her 2 and a half years old daughter , Rae Ann, but ME craving to make doggy shaped cookies is like reliving my childhood.  I love my retirement and I enjoy making the dough ( which I refer as my play dough ) 

I saw these animal shaped cookie cutters @Daiso which came in a set of three - dog, cat and squirrel. How nice if there is a Rooster too. This year is the Year of Rooster according to the Lunar Calendar. Bought them on my last trip there and since then I have been wanting to play with them. Roll out the play dough and cut cut cut. Seriously, I had a great time using the cutters :)  Reliving my childhood is so aptly stated.  This recipe is very easy to make , healthy and has great texture ( light and crunchy ) and very fragrant.  Maybe because I used Lukpak butter, the cookies has a more buttery flavor and not to forget the roasted seaweed gave it a unique flavor. Awesome cookies , goes well with a cup of freshly brewed hot coffee or freshly steeped tea. 

* note: Grace's original recipe is titled Healthy Kinako And Seaweed Flakes Cookies - I omitted the Kinako powder and used only  seaweed  flakes.

to a more smaller pieces - reason being the cut out line will be more smoother

it took about 15 mins to bake one batch of 15 cookies (dog shape )
 in my oven...every oven differs..mine took about
15 mins...after baking all my doggies turned mottle color
but none the less , the taste is as good as they look























I tried out the cat shaped cutter and the cat turned out great too
 love the cat cutter too ...meow !

Hubby is super delighted and  happy  with these cats and dogs :)
one load of this recipe can make 39 to 40 pieces.

Seaweed Flakes Cookies  - adapted from Piggys Cooking Journal
 
Ingredients:

100g cake flour
50g whole wheat flour
10g cornstarch
60g castor sugar
28g unsalted butter, melted and cooled
1/4 tsp aluminium-free baking powder
1/4 tsp salt
1 egg

1 tbsp Kinako powder - I omitted this
2-3 tbs roasted seaweed flakes

Method:

1) In a mixing bowl, whisk together cake flour, wheat flour, cornstarch, baking powder and salt.
2) Lightly whisk the egg, stir in butter, follow by sugar.
3) Pour the egg mixture into flour mixture. Using a spatula, stir until combined.
4) Crushed the roasted seaweed flakes to smaller pieces. Add seaweed flakes to the dough and mix well..
5) Wrap the dough with cling wrap, rest in the fridge for 1 hour.
6) Preheat the oven to 180 deg C. Cut out the dough with cookies cutter.
7) Bake in preheated oven for 10-14 minutes.

Flaky Spring Onions Pancakes

My first post for 2017, I know I have been in a procrastinating mood the last 12 months :p  but I hope this year will not be a slow moving one for me .  Okay, I feel like kneading and since I have lots of homegrown spring onions in the fridge, I decided to make this Flaky Spring Onions Pancakes for our breakfast. I am glad that I tried it and gosh it was like the roti prata except this is oriental roti prata :) Easy to make and really taste good.  I really don't understand people who say this "why bother to cook when it is just for the two persons"  ....oh well, they dont know why they miss out LOL!  Okay , maybe I am weird or the odd one out. 

Anyway, back to this flaky pancake, one just need flour, water , spring onion and oil and you can make the most delicious flaky pancake. I watch this recipe on youtube and I knew I had to try it out to believe that it is flaky.  Thank you May Lynn for sharing this wonderful recipe here 

the ingredients for making this delicious flaky pancake
flour, hot water, room temp water, salt, spring onions and vegetable oil

knead dough till smooth and soft, divide dough into 4 equal portions
and let it rest for 20 mins

roll into a round flat disc, brush oil mixture (3 tbsp flour, 1/2 tsp and 2 tbsp cooking oil )
then sprinkle chopped spring onions on surface 
then roll like swiss roll, 

after rolling inot a swiss roll, flatten it a bit, brush oil mixture on surface
then roll it up again from left to right

tuck the end under the roll and flatten and roll into a flat disc

roll into a flat round disc
and it is ready for frying

heat up a frying pan with a tsp of cooking oil, once the pan is hot 
fry the pancake under medium heat ,
3 mins on each side until lightly brown and crisp and cooked thru

crunch it before serving
it is flaky and delicious, you can dip it with chilli sauce or
black vinegar with chopped chilli and chopped spring onions

I called this chinese roti prata :)

Flaky Spring Onions Pancake - adapted from May Lynn YouTube

ingredients:

3 cups flour
1/2 tsp salt
1/2 cup boiling water
1 cup room temperature water

2 stalks spring onions - chopped

some cooking oil for frying the pancake

oil mixture
3 tbsp flour
1/2 tsp salt
2 tbsp cooking oil * I use rice bran oil

black vinegar sauce dip - 
mix the ingredient together to make dip sauce
1 tsp of black vinegar
1/2 tsp soy sauce
chopped chilli
chopped spring onion


Method:

Mix 3 cups of flour and 1/2 tsp of salt in a mixing bowl.  Pour in 1/2 cup boiling water and using a spatula, mix into a dough, add in 1 cup room temperature water and continue to knead until a smooth dough is formed.  Cover and let the dough rest for 20 mins.

Chopped the spring onions and leave aside.

Prepare the oil mixture by mixing 3 tbsp of flour, 1/2 tsp salt and 2 tbsp of cooking oil in a bowl till well mixed.

After dough has rested for 20 mins,cut dough into 4 pieces.  Gently knead each piece then gently roll each piece into a thin pancake, brush the oil mixture on surface and sprinkle the chopped spring onions on the surface.

Roll it up , lightly flatten it . Brush oil mixture again on top and roll up again. Tuck the end part under and roll again into a flat pancake.

Fry the pancake on medium heat.  Keep on turning the pancake until it is fully cooked.

Serve with chilli sauce or black vinegar sauce.
